    1 tbsp or 14g unsalted butter
    1/2cup or 125ml dry white wine
    1/2cup or 125ml white wine vinegar
    1 tbsp veal demi-glace
    1.25 cups or 313ml water
    Makes ~ 1/2 cup or 125ml (without the onions)

    Another option that I'd prefer is to use an immersion blender and emulsify the onions into the sauce.

    I’m loving your channel. Sauces are a way to wow the crowds, so few people take the time to make them. This one I would start early to allow it to reduce while I’m cooking the rest of dinner. And I was gifted five or six tubs of Demi glacé years back by a friend who was moving. She’s a cookbook author with many books out and who writes for a number of newspapers. I find it now on Amazon, in fact I need to order some as we speak. 😊
