    I went to Thailand as a kid with my family and ordered this fish dish on the beach, they grilled it over charcoal and it was one of the best things I've ever had. I've been wanting to make this dish for many years since then, so I was so happy when I found your recipe! It takes a lot of work but I am happy to say that it tastes exactly as I remember it.

    Omg! This is one of my favourite Thai street food. I cannot find galangal and kaffir lime leaf at local supermarket today (they usually sold out quickly due to small quantity available), so I replace them with ginger and lime skin. I use black tilapia, scale on, grill it, and the result is soooooo yummy!!!

    Hi, I am from India, I tried Hainanse chicken, Salt roasted fish, and Laab Gai. All came out to be so good n enjoyed Thai food. I am very much interested in trying new recipes. We can avoid oil. 😋😋

    When I was in Bangkok in December 2023, we had the salt crust-grilled tilapia as part of our sidewalk street vendor meal on several occasions, and I really came to love it. During my solo on-foot exploration I lost count of the number of salt crusted fish I saw on the charcoal grills of the street vendors I’d pass. I will definitely try this recipe!

    When my wife makes this, she does the Nam Jim seafood sauce with crushed hard boiled egg and peanuts, it's so good!

    im from the southern parts of iran and we always always always have a paste of tamarind cilantro and garlic with fish very similar flavor profiles we even leave the scales on too ive always stuffed my fish with that paste but im going to try it with the salt crust i bet it will be amazing thanks!!

    lol that 'salt cave' is called 'salazón' in spanish and it was used by the romans to preserve the fish longer without freezing it ^.^

    The one I ate Pla chon pao, salt roasted snake-head fish, when i was in bangkok is a bit different from this one but it's extraordinary 👍

    When I was in Thailand last, the cook at the resort was named Pai as well. But the really funny thing is, they suggested I try this kind of fish when I was next trying the street food in Chiang Mai. I kinda wish I had watched your video first - I ate the skin. 😂 Now I know. 😜 Thanks for this great channel, it's my first go to place whenever I cook Thai (which is a fair bit) and I want some advice or pointers.

      Jeff Ward not sure what are you live but if we have marshals I'm homegoods or TJ max go thier. Much cheaper.
      Try pink Emily and size it comes in all different textures I always buy it in the grinder and loose in the bag. I use it with vinegar and water to soak pork beef or chicken for 10 minutes. She see where your water looks like after you're done soaking

    Oh it's that easy! XD I had Spanish Salt Encrusted Fish and it was delicious :P I thought it was very hard to make but you basically just pat salt into the fish :P
    I might try this sometime :P

    Hi, Pailin: Have you ever tried using coarse sea salt since coarse kind is harder to melt. It will make the fish less salty, therefore, the skin becomes edible? I haven't had this experience. I am just trying to save the skin & for presentation purpose.

      You can grill it on the grill...but don't think it would work well on the stove.

      And I guess there is a misconception about sesami oil and Thai cuisine. Actually sesami oil is rarely used.

      cHemon question. Why is it necessary to use MSG in all Asian sauces. You're food should be naturally.
      Japanese food is all Chemical free.

      - Another misconception? Japanese food is all chemical free. Really? I don't think so.
      - One of the biggest company producing MSG is Ajinomoto, a Japanese company.
      - It enhances the favour and add umami taste (discovered by Japanese). That's why it's used in seasonings.
      - I have a background in Chemistry and to me, chemicals are not something that will always kill you. Even water(H2O) can be considered a chemical.
      - MSG is basically just sodium (like you can find in table salt) and glutamic acid (an amino acid found in regular protein). Biochemistry students can easily draw its molecular structure.
      - MSG is not evil. The danger of consuming too much is the sodium level, just like salt.
      - Moderate amount of MSG is safe according to all official health organizations in the world. Excluding some pseudoscience ones.

      cHemon then they all lie. I ask every time if they use msg in their restaurant and they always look at me like he had no idea what I'm talking about that's when I know they're lying. My stomach hurts while I'm eating. That's when I send my food back.
      I'm not allergic to salt so it cant be just salt.
      So you never answered why can't your food taste good without it?
      I make all Asian food and I make it delicious but just organic ingredients
