    High Pressure Processing is a cold pasteurization technique which consists of subjecting food, previously sealed in flexible and water-resistant packaging, to a high level of hydrostatic pressure (pressure transmitted by water) up to 600 MPa / 87,000 psi for a few seconds to a few minutes. It is the same effect as subjecting the food to 6 times the deepest point in the ocean.
    Since 2000, High Pressure Processing has been successfully implemented in all type of food industries worldwide. High Pressure Processing is a natural, environmentally friendly process that respects the ingredient and helps maintain the fresh food characteristics like flavor and nutrients. It is a real alternative to traditional thermal and chemical treatments.

    the best way of pasteurization especially for milk, you can make a cheese with this milk as if it was a fresh one.

    With that much pressure,will the package deformed or even explode?if not wont the pressure only affect the surface?

    HPP ialah proses yang menggunakan tekanan tinggi. Pada HPP dimana mikroorganisme akan dimusnahkan tanpa merusak rasa, nutrisi, dan organoleptik pada produk. Hal ini akan menghasilkan produk yang tetap segar. Proses HPP menggunakan tekanan sebesar 6000 bar dengan waktu kurang dari 3 menit.       HPP systems are very expensive to run. Also, HPP mainly run using batch systems which are lot slower than a continuous process system.
