Awesome! Glad to see ND farmers are doing and teaching this type of regenerative farming. Benefits the first year or two may not be as pronounced as far as yield on the primary cash crop, but over time they will definitely see: improved organic matter levels in the soil, better water penetration, less runoff, better growth during dry stretches, fewer weeds (and thus need for herbicide), less need for fungicide, less need for fertilizer. Pollinators will thrive and wildlife will multiply as well. Hopefully a cover crop such as winter rye + brassicas is planted immediately after harvest so there is always something growing, breaking up the soil, preventing evaporation and weeds, etc. Well done! Miss my childhood home state of ND.
So, the cover crop was drilled right after the sunflowers were row planted? With those mixes ( grasses & broad leaf) what could you possibly spray at planting time or post? Or, was it sprayed at all? Like to see some information on sunflower yield planted into an existing cover crop seeded in the fall or growing season before, and one that was eliminated thru a pre-plant burn-down in the Spring?

You can't do clover if you have deer around. They will come and knock down your sunflowers just to eat the clover.
