  • 🍋 1930 Magic Lemon Cream Pie. Welcome friends! Today on the Old Cookbook Show, we are making Magic Lemon Cream Pie, from the 1930 “New Magic In The Kitchen” cookbook. This pie recipe is essentially a Lemon Meringue Pie made with condensed milk. It is also what food historians believe to be the genesis of the ‘modern’ Key lime pie, as it breaks away from previous more labourious methods.
    Ingredients:
1 can (sweetened) condensed milk (300 mL)
    œ cup lemon juice
    Zest of 1 lemon
    2 eggs
    2 Tbsp granulated sugar
Baked 9” pie shell or Cracker Crust: ‱ 🏆 Graham Cracker Pie C...
    Method:
    Preheat oven to 350ÂșF
Blend together condensed milk, lemon juice, zest, and egg yolks.
Pour into a baked pie shell.
Beat egg whites until frothy and then add sugar while continuing to beat to stiff peaks.
Cover pie with meringue and then baked 15-18 minutes until meringue is cooked and golden brown.
Our Island Lemon Pie, with a folded in meringue: ‱ 🍋 Island Lemon Pie 🍋

This was a very "memory lane" video for...it brought tears and laughter. My Momma made the pie like you did for me....I love lemons and it was my pie if sick, sad or just having a bad day pie. Momma has been gone for a year now. I really needed to see this...made me realize how much I loved Momma, now it's the kids and grandkids time to make the magic lemon pie with Nanny. Thanks

In the late sixties, in San Francisco, California, where I grew up,
we lived just a short walk away from a Woolworths department
store. They had a counter where they sold milkshakes, coffee
and an assortment of slices of different pies among other things.
So after or before you did your shopping, you stopped there and
got a cup of coffee and a slice of pie. My mom and I always got
a slice of the lemon meringue pie. The meringue was very high.
I don’t remember how much it cost. But it was inexpensive.
I want to say 25 cents. Loved the pie and the memory.

I have a similar memory of a local diner that sold their own homemade key lime pies and they were heavenly. The place has since switched to store bought pies along with everyone else in the area so its something i kind of miss, but this makes me want to make a key lime pie from scratch now!

The only remaining Woolworth lunch counter in the US is in Bakersfield, CA. We discovered it 2 years ago while visiting family. The building is an old Woolworths building. Other than the lunch counter, the rest is for antique booths. Of course we had to have one of their hamburgers and a shake served in the metal container! We were so impressed with the lunch counter, I had to take a full length picture of it. After we got home, we had it enlarged and it hangs at the bottom of the stairs to our basement.

I was born 1949 and my first memory of lemon ice box pie was this recipe used at Christmas 1956, but mom used vanilla wafers, crushed for crust, and whole at edges. The pies disappeared almost instantly. Limes came along a few years later.

I grew up with lemons in California, and my desiderata for my adult life was "a clapboard house with a big front porch, a picket fence, and lemon trees." I got the clapboard house, a smaller front porch, a picket fence, but no lemon trees here in Montana. Apples. Raspberries. No lemons. Alas. I, too, wish I could still go outside and just pick some lemons.

I used a full 14oz can of condensed milk thinking it was the same size. It still set just fine. The second time I made it, I just happened to have some wild black raspberries, so I macerated them and put them on the crust before I poured in the filling. I also used a third egg white the second time I made this to have a bigger meringue. Thanks for doing this one, it’s a new house favorite quick dessert.

    • @arthas640
      @arthas640 Pƙed 4 lety +2

its funny how long that name has struck around. "Ice box pies" were a special type of dessert, especially in warmer places like the south, since ice was fairly expensive at the time and so iced desserts were a special treat as opposed to the cheaper/easy fruit pies. People in warmer areas HAD to buy ice for their ice boxes and they had to be imported from farther away, increasing their cost but the ice was cheaper up north and in some areas people even had their own ice houses where they would harvest ice for free in the winter and save it into the summer but in areas without natural ice or frost it had to be imported, often from lakes in New England.

    Looks delicious.
I'm with Julie - Lemon Meringue Pie is my favourite, and given the choice - I'll usually pick that over many other things.
Then again, if I find myself in a French Patisserie , as I have on occasion, and there's a slice of Citron tart - with, or without meringue - well, I'm not going to pass that up. It's certainly one way to brighten up a day.
My issue with most versions of the lemon/citron pie/tart is that often they're not lemony enough. The ones I find here in Australia seem to have been driven past a lemon, or maybe prepared in a kitchen which had an empty bottle of lemon essence in the pantry.

This is one of the 3 more popular desserts in Brazil, the main difference being that most people here use condensed milk, lime juice and pouring cream instead of the yolks. The other two popular desserts are
1 - condensed milk flan (or creme-caramel), aka "Pudim"
3 - egg yolk and coconut custard pudding, aka "Quindim", which came from a Portuguese recipe made with ground almonds that were substituted in the tropics with ground coconut.

It was sweet and tart and definitely one of my family's favorites. Perfect for a hot summer day in the south, which is one of the reasons they were so popular down here in the US! Yes, even though we had to bake them in an oven.

I became something of an expert with Delia Smith's recipe for it when I was young (from her Complete Cookery Course) and now I've got saddled with the job of making it most Christmases, Easters and some other family gatherings. Fortunately it's pretty easy to make and it's so worth the effort! And you could even buy a pastry case instead of messing around with making shortcrust if you really wanted.

I've been making this pie over 55 years and my Mother made it before I did, the only change we've made, our family doesn't like meringue, so Mom stopped making it with meringue but cooked the pie about 10 mins to cook the egg yolks, the last years, we serve the pie with whipped cream. Most family members prefer it plain. It's a delicious pie. We have always made this pie with a homemade graham cracker crust. We have a lemon tree in the yard so we always used fresh juice.

My mouth was watering and my memories of my mother were clamoring while watching this video. Finally made it yesterday. Used 2 lemons for the rind and it turned out to be as mouthwateringly fantastic as I remember. This recipe is going to be put in my ABSOLUTE FAVOIRITES RECIPES book....thank you!!!

@@mif3609 Normally I imagine it would but I didn't, I waited for it to cool down and dug in. So GOOD because room temp because I found it more flavourful. And it still held its shape beautifully!

I find it interesting how raw egg yolks mixed into the filling and you didn’t need to cook it, how way back when people didn’t have a cow and make people scared about eating raw eggs but again back then our food wasn’t as contaminated as now a days. Love the recipe from the old cook books which I have also and love the way you presented it!

My Mom always made lemon meringue pie. I used the recipe from the Betty Crocker Cookbook circa 70s. Their recipes always come out perfect. We both had mile-high meringue. 😋 I haven’t made it since the 80s, people just don’t seem to like the tartness the way I, we did then.

In the late 50s and 60s I grew up making this pie but always had to make a pie crust that I backed first. It was attached to Eagle Brand sweet condensed milk can when I was a child.

Will have to get some lemons when I go shopping and give this a try, be interesting to see if there is much difference from one made with lemon curd. Would love try one with the meringue folded into the lemon mixture as well for comparison.
