Bourbon Honey Citrus Smoked Salmon

- Smoked Salmon is a show stopper on any dinner table when it's perfectly cooked. In this video, I decided to smoke a 1 3/4 pound filet. I also wanted to brine and glaze it so I started looking around for ideas. I also wanted to incorporate some Jack Daniels Tennessee Honey into the recipe. The recipe I used in this video is based on one I found in the book "Slow Fire" by Ray "Dr. BBQ" Lampe.
Brine:
3/4 cup cold water
1/4 cup Jack Daniels Tennessee Honey
2 tbsp kosher salt
1 tbsp brown sugar
1/2 teaspoon Onion Powder
1/2 teaspoon fresh cracked black pepper
1/8 tsp ground cinnamon
Marinate a 1.5 to 2 pound filet in this brine for one hour while your grill is warming up to 250 degrees.
When the brine is complete, drain the brine and pat the fish dry. Dust both sides with paprika and put it on the smoker at 250 degrees with your choice of medium to light intensity smoking wood (I used apple.)
Mix up your glaze:
3 tbsp honey
1 tbsp fresh squeezed orange juice
zest of one orange
1 teaspoon Jack Daniels Tennessee Honey
When the fish is about ready (30 minutes or so), brush the glaze on the top of the salmon and remove it from the grill....
Dig in!

I wasn’t much of a salmon eater, but this has become our favorite salmon recipe. In fact, we are having it today again!
I made this as part of Christmas dinner...this was definitely the best piece of salmon I ever cooked. The family thoroughly enjoyed the fish! I highly recommend this recipe for anyone that enjoys a cook!
OK - Have made this a couple of times and always turns out GREAT. A fan favorite. I brine for 24 hours in the frig instead of 1 hour. Keeps for days after cooking!
I made this tonight. My wife says this is the best thing I've cooked on the Joe and even though I don't like salmon that much, smoking it and that glaze made it DELICIOUS. Since it's good for you, it's now part of our regular rotation.
BTW, made it with clementine juice and zest because that's what we had and it was maybe better than even an orange--just that one notch sweeter.

Thanks, John! Just an FYI, I was never a fan of Salmon, until now. My daughter wanted salmon grilled for her birthday, so we decided to give this a try. Just so happened I had some JD Honey in the pantry. We followed your instructions here and it was Fan-Fudgin-tastic! I know of one other person who cooked salmon like this and he was a master chef (he catered my daughters wedding BTW). You get a +10 on this one. This recipe is a keeper.
I did this, modified the recipe a bit and used Maple Syrup, An Irish Whisky and Lemon. Turned Out Amazing!

Great recipe! I changed the paprika powder to smoked paprika powder and I used a dry brine. But perfect taste! Thnx
Followed your recipe mostly, I substituted the Jack Daniels for Glenfiddich 15yr Scotch. That recipe is a keeper and in my recipe list. Thanks for your videos and recipes I am learning a good bit and the trying them out is a fun experience! I also placed it on top of a mixture of long grain rice and spinach.
Cooked this salmon dish last weekend and it turned out beautifully. As I am in the UK and honey flavoured Bourbon is not easily available I used Drambuie instead and it worked very well. This is only the second dish I have cooked on my new Kamado Joe and I could no be more delighted with the result. Thanks for the excellent video recipe. Piers

OMG! 1st fire on my brand new Big Joe 3 and it could not have gone better. Used Cherry Wood on top of my lump charcoal and it really imparted a fantastic flavor. Just about to pull the nearly 2lb slab of salmon off the grill. I kept 1/2 the skin on the salmon as we like crispy skin. This is a winner and the Jack Daniels Honey Bourbon is fun to drink over ice, too.

John, I made this the other day for me and my 12 year old son (he is the only one of my kids who like fish) and it was literally the best piece of fish I have ever eaten! Flavorful, juicy and flaky goodness! I cannot wait to make it again. By the way, I added a dash of Sriracha sauce to the glaze for a nice kick. You should try it.

I buy JIm Beam Bourbon with Honey for our recipe. I was in the local liquor store to buy some more when I spotted a new product (to me), Jim Beam Bourbon with PEACH. I wonder how that would taste with the Salmon Recipe???

I noticed that some of your measurements are slightly different than those in the "Slow Fire" cookbook... is that by design?
Looks like you have a good recipe...now all you're missing is a real salmon fillet. Wish you could raid my freezer.

Can you really taste the whiskey in this recipe? I am all for cooking with jack but I'm thinking of trying it with a crowd that isn't really a bourbon group

I would never use farm raised salmon. Alaskan is always wild caught and good frozen

I can't believe this is officially endorsed by Kamado Joe! Salmon should be marinated for at least an 12 hours before smoking instead of the one hour done here. Temperature on the smoker should have been at least 25-50 degrees lower than he set it. Smoking time should have been a lot longer. The fat can't "bubble up through the skin" when he completely removed the skin. Also, the skin should be left on because a lot of people like the taste of smoked salmon skin, and if they don't then it comes off effortlessly so that it can be passed around to those who like it. The glaze could have been applied half-way and towards the end to help lock in more smokey flavor between the layers. Lastly, there is no reason to use a full Kamado Joe just to do 1.5lbs of anything. That is a waste of good fuel. Even a 14" Acorn Jr. can handle 5-10lbs of fish or meat at a time.
