I usually do this with nothing but bananas, a pinch of salt (to make it more savory and to balance out the sweetness) and vanilla. If I feel like it I ad cocoa, gingerbread spices or berries.
To make vanilla extract, buy some vanilla beans. You can order grade B vanilla beans online, which are really inexpensive. Then split them in half and soak about 8 - 10 vanilla beans per cup of vodka or rum in a jar with a lid. Put it in a dark place for at least 2 months. The liquid will get darker and darker. You can even puree the soaked vanilla beans in a food processor or blender at the end to make vanilla paste. It's really easy!

I tried this in my Blendtek and it was a bit challenging. Looks like you used a food processor. Does that work better? I have a food processor but not sure if it's as powerful as yours. Love your videos and just purchased your artisan cheese cookbook!
