Best Greek Pita Recipe - Tiropita - Yummy Cheese Pie with Homemade Filo Pastry.

- There is no better pita!! After a bit of experimentation and weighing out, this is my version of my mum’s recipe.

I don’t have a large round tray, so I use two rectangular trays 30 cm x 20 cm x 3 cm.
Ingredients:
480 g flour
300 g warm water
About 2 tbsp. salt
Olive oil (Greeks rarely say “olive oil”, they just say oil; there is no need to specify what kind because there is no other kind!!)
About 1 tbsp. sugar
4 eggs per tray (this recipe is for two smaller trays)
220 g feta per tray (which is about 1 slab, or “feta”, from the Dodoni feta container)
These last two are prepared in separate bowls for ease of preparation.
Instructions:
Mix the water, salt, sugar and a dash of oil. Pour in the flour. Mix and knead dough. Roll out into snake and then cut into 16 pieces (8 per tray). This allows a 3:2:3 configuration (3 layers of filo down first, egg/feta mixture, 2 filo layers, more egg/feta, three more layers). Flatten dough ball and leave for 30 minutes.
Prepare egg and feta mixture.
Roll out each filo with a rolling pin and lay onto tray. Pour a little oil and then repeat. (My mum rolled out all the filos (in Greek plural, the “fila”) first, but I don’t. I roll out and place!
Bake at 180°C for about 35 minutes.
So far the best technique I've seen on CZcams- thank you to your Mother.

I am always on the hunt for a good phyllo recipe, and growing up all my neighbours were Greek, we NEVER had the store bought phyllo now. And I want to recreate the authentic pita, as we used to call it.
this looks amazing, and delicious... so clever of your mom to use the dish soap dispenser for olive oil!! easier to use rather than a pastry brush.
I am definitely going to try this.. I know there are no exact measurements. But the phyllo sheets she made are so perfect!

Made the old way which is the best! Way to go Mum!My mother mad her dough similarly but used yeast. Other than that basically the same and the best crusty kora/filo. World Class Mums!

I have watched endless videos of people make pita from scratch including my mother, aunties and mother in law, by far, your mothers technique is one of the best I have seen and I will attempt to make it your mums way. Filo from the supermarket is great but home-made is probably better. There's an extra crunch factor! But there only so many hours in a day.
Yes! I'm alway too impatient to make the filo by hand like my yiayias. I love to see this done wholly from scratch. I put my time and love into buttering layers 😂 I do sheet pans but love this method. Tiropita is my #1 comfort food. Making it is therapeutic and end result is heaven on Earth.

@@MK-pj1to She used to cook lots of great food like kokkinisto kreas, galatopita and stuff but it was generally standard things like roasts and spaghetti. She's not doing as much as she used to, though.
