I was lucky enough to be invited to my Amish friends quilting (I just visited with the ladies while they quilted). The younger girls don't enjoy quilting, so they were put to work making noodles. They used 96 egg yolks and I don't know how much flour, but their process was just like yours including the ironing of the dough - which was new to me. It was a wonderful, relaxing day filled with visiting and sharing of stories and I enjoyed it so much. My friend ended up with two and a half five gallon buckets of dried noodles and I came home with a full cookie sheet of noodles which I finished drying. Memories to treasure. Thanks so much for sharing!

I’ve made noodles before, but I never heard of ironing them! I grew up in a community with a lot of Holdemann Mennonite people, so I wonder if it’s part of their tradition. I don’t have a pasta machine, so I roll my noodles out by hand, and cut them with a large chef’s knife. I also use the same dough to make egg roll wrappers, and have even made fried hand pies with it!
I enjoyed watching the boys’ antics, especially the flour facial hair! I love Hadassah’s name. I wish the book of Esther had been named Hadassah instead, since that was her real name! I hope your Hadassah is as courageous and steadfast as her namesake!

The chicken tasted like chicken (not cardboard) and the noodles were amazing with just enough flour from the noodles to thicken the soup perfectly! This brings back memories of my mom making huge amounts of egg noodles for our family of 12. 😊 My dad made kind of a picnic table where we could all sit together and Mom would cover it with drying noodles. Ironing pasta sounded bizarre at first but it makes sense when you think about it. My mom just fan-folded the dough and cut it by hand: no pasta machine or pasta cutter.
My son had ducks for a while and their eggs were great. I forget why, but eventually they all had to go to freezer camp.

When they're bone dry, I bring them in and put them in my Ninja blender with 3 blades. In 1 minute, I've made shell sand and it takes up way less space! Then when I plant, I use a palm full of the ground shells into the hole or row. In south west Colorado, we need this perfect blend of calcium and other minerals in our soil. Beautiful noodles!!!

Love your silly boys. My Grandfather was born a Mennonite in Manitoba, Canada. He became a Methodist minister as a young man so, other than the family names, I knew very little about his history. Since I found your channel, I am becoming more curious about his Mennonite history. I do know the family originally came from Friesland, Holland. Thank you for sharing your homesteading life. I make butter and other easy cheese making recipes. You have given me the courage to try farmhouse cheddar.

You mentioned that you had wrapped your dough in a plastic bag to rest and develop gluten. Pam over at RoseRed Homestead just did a very interesting segment on the cleanliness and environmental impact of plastic bags vs other alternatives. Worth watching. Thanks for the videos; I know they take time and effort. You are appreciated!

  • @elizabethalexander-pukerud7951

I use this recipe! I got it from my grandmother many, many years ago! I'm 69 now and she was 60+ when I was born! She was Mennonite. Now I know where my recipe comes from. Now my great aunt, my grandmother's sister, told me not to add the salt if I was cooking the next day. She believed it made the noodles tougher. But to store them she wasn't certain if the salt helped with preservation. So, she added it! So, I do also! My recipe is different from others! But everyone wants my recipe. Lol look in my recipe box I tell them. I keep a couple spare cards in there! I never use it as I believe I was 16 the first time I solo'ed making them!

I love watching the boys helping - even with clean-up! I love all your tricks and tips too. I have never seen the iron trick before. I just made some gluten free egg noodles and they turned out great. Now I want to make a huge batch to iron and dry.

Wow that’s a cool tip with ironing the dough! I never knew that it needed to dry first before being cut. Always thought it was such a pain to make because of the cutting process and how sticky it would get. I’ll have to give it a try and fry it out first. ❤

I seriously love your videos! I lived in a community that had a lot of Mennonite families and we attended a Mennonite church as well. I miss all the old fashioned ways of making food, and preserving it. I'm trying to put that into practice now that I'm a parent and teach my child. Your videos are great reminders of what memories I've lost. Thank you!

My grandmother made her own noodles. I loved watching her. A well of flour, an egg, some salt, a bit of water if necessary. How much do you need of each, Mom Mom, I asked her. She said she didn't know, she just knew when it was right. She rested the dough then rolled it very thin, cut it with her paring knife and dried the noodles on her cutting board. I would sneak samples once in a while. Really good. That was about 65 years ago.

Kendrick is quite the happy helper and a ham ( clown s around, silly to cheer up others. That describes a ham. As people's lingo varies from area to area, like we use blinkers while others use directionals.)

Thanks for sharing this. I love how you get your littles involved in the prep and preparing of food. Love the kiddos antics with the flour and I see my boys aren't the only ones who can't keep their hands out of bowl of flour...lol. Another thing, Playdough in the pasta roller/cutter. I thought my pasta cutter was the only one that has had playdough crusted into it until the next round of noodles went through. Thank you for sharing real life and not editing those things out.

I tried this recipe, but I ironed mine after I slept on them in my first bed, since they got wrinkly. But then I didn't have a second bed available, so I finished drying them in my garden bed.
    It all worked out.
