For those using a flat ceramic cooktop, I found it necessary to move the pot off of the heat source. Turning the burner off wasn't enough and my first try was overcooked. For my second try, I chilled 300ml of water in the freezer while waiting for the other to boil, followed the recipe (making sure to move the pot) and large eggs (by american label standards) took 11 minutes. You can reheat them the next day by pouring hot water over them in a bowl and letting them sit for 2-3 minutes. So good!
I do a very different technique but with very similar results. I just crack an egg into a well in a warm bowl of rice, then cook covered in the microwave for 1-2 minutes. Very creamy, quick, and simple!
+Aida May That really is "music to my ears". Thank you for posting such an awesome and uplifting comment Aida!!!!! I will try and upload a new video tomorrow......I hope you like tonkatsu. kind regards, Dai
oh nice to see it looks so easy.. before I thought onsen tamago required a much longer time at a certain temperature, will try and make this method soon, cheers
Just made this for hubby and he absolutely loved it. Didn't do a very good job on the egg but next time l will be better. Thanks so much for the recipe.
+Vincent Gravel Thanks a lot. Its great to get your feedback as we're still very much trying to find out the best format for the channel. Glad you like the videos Vincent!!!!!! Appreciate the support mate......
Great stuff chef, i love these simple recipes as a student. They are cheap, delicious and easy to make in between study. I tried this and it was great, i added some spring onion, fresh spinach. Back at my parents im adding some meat as well. Great!
+Radj Achaiber sing Thats a very nice comment, thanks for that buddy! Your recipe sounds delicious, I'm sure it will taste great with the meat and spinach!
Can I just say that this dai your great many great tips I'm a novice when cooking Chinese recipes I been using a other cooking CZcams channel finding it hard to find the ingredients anywhere but thanks dai I love the channel and love your recipes please keep them coming one happy subscriber
Been watching your channel a couple weeks, been wanting to do more cooking like this for a while, and you just showed me something to try that has my two favorites, poached egg and rice... definitely going to give this a try.
+RoughriderUT Thank you so much for the kind comment and support. I'm glad you like the poached egg recipe. I've always got a batch in my fridge at home 😁
I have traveled and lived all over the world and the Japanese culture is by far my favorite. Your videos bring back so many wonderful memories. Thank you for them all. Gochisoosama Deshita
+Fausto Makoto Takahashi Thank you very much for your comment and support!!!!!! I'm glad you like the channel. Brasil is an absolutely beautiful country!!!!! Dai
Hello Chef Dai! Much respect. I realize this is a super old video, but yours is the one found that looked most appealing and not too hard. And now the one I turn to. On the other hand, though, I will rarely eat four eggs by myself. I don't need this many. Unless they keep? I dunno. Any suggestions for a single lady?
I feel silly asking this but while you wait the 12 minutes, you open the heat? Or the egg will cook with the lukewarm water only? Thank you for the great videos! :)
+amenda916 Thanks a lot, thats great!!!! I always get so much pleasure from reading comments like your one. I find these eggs so versatile as they can be kept in the fridge for a few days and simply warmed up and cracked open when required.
Just for refrence everyone: 5 parts water boiled, then cooled off by 1 part COLD water! Cooking directions in desc and eggs should be 1 per 500ml. Rinse. Done them with 600 liters total and it worked out perfect!
Thank you for showing us how to make these eggs. We live in the hot area of California and our cold tap water is pretty warm, close to 80 degrees. I don't think it cools down the boiling water enough because the eggs are always over cooked. Can you tell us what is the temperature of the water is after you put in the tap water. That way we can duplicate your results. Thank you.
My grandma would fix something similar with this. but she would just take soy sauce and raw egg and beat it together and then mixed in her gohan.she called it toma-toma.
i like to eat onsen tamago. but when u cool off the eggs, is there any better way instead of keep pulling with tap water? ($$$water bill in out region) thz!
The egg looks pretty raw....is it ? I would assume you know your egg producers (think sourcing is better in Asian countries) and the rest of us should use pasteurized eggs. I think I would. Thx for the vid. Egg-cellent!
It really brings back a lot of memories, ne? The first time I ate this dish was in a ryoukan in Fukushima, around 10 years ago. I hated it at the first time since it's just a raw egg in my eyes, but once I tried it, this has become one of my favorite dish because it's sooo simple yet delicious XD it's perfect for breakfast ^_^ but it's a wee tricky with the shouyu though, because you don't want to add it too much, or too little
+maftj Thanks a lot!!!! Making the videos and uploading them onto youtube gives us a lot of pleasure. Knowing that others are enjoying them too really means alot to us...Thanks for the comment!!!!
Excellent !! Yet a new way for poached eggs... I will try it... We're four, so I usually cook 8 eggs. Is maintaining the 5:1 ratio the trick ? So for 8 eggs, 3 litres of boiling water to 600 ml of cold ? Great videos. Thank you
+tonton heredero I will definitely try and upload a donburi video for you soon. In the meantime, you can find a tempura video on our channel here: czcams.com/video/EiHwtjNVyZE/video.html
Raw egg is delicious than cooked egg. We need water in raw egg dish. I eat raw egg rice every day. Why did boiled?? Raw is delicious than other. It is symbol of freshness.
If you're so damn passionate about wasted water, you better be doing volunteer work on getting clean water to people or something. Y'all sound ridiculous.
Well it's just water, nothing from inside the egg has come into contact with the water so you can reuse the water for boiling other things like noodles. Or wait for it to cool before watering plants, so it's not a complete waste of water.

Add green onions and toasted sesame seeds for better flavor, or sprinkle with furikake
I do a very different technique but with very similar results. I just crack an egg into a well in a warm bowl of rice, then cook covered in the microwave for 1-2 minutes. Very creamy, quick, and simple!
that's a really weird way of cooking an egg but creative
That's how my sister does it. Her kids loved it and ate it every day.
I tried this yesterday and it was amazing! The most perfect soft boil, nothing sticking to the shell.
Please upload more videos soon.
+Aida May That really is "music to my ears". Thank you for posting such an awesome and uplifting comment Aida!!!!! I will try and upload a new video tomorrow......I hope you like tonkatsu. kind regards, Dai

oh nice to see it looks so easy.. before I thought onsen tamago required a much longer time at a certain temperature, will try and make this method soon, cheers
i tried this recipe. it works!!! make sure your 300 ml water is COLD, i added ice to mine for a couple minutes then added it to the boiling water.
Just made this for hubby and he absolutely loved it. Didn't do a very good job on the egg but next time l will be better. Thanks so much for the recipe.
Onsen tamago literally means natural hot spring egg.
Love your videos. It's nice that you put the ingredients and the steps in the description as well. Good job :)

Thanks for replying! I was wondering, what is your method for warming them up? Won't they cook a little when warming them up?
amenda916 No probs. I simply boil some water in a kettle, put the hot water in a bowl and submerge the eggs for a couple of minutes.

Hey, I love the videos. Do you think a video on how you make your steamed rice might be on the horizon?
Onsen Tamago does NOT literally mean Japanese style poached eggs. It means hot spring egg.

Delicious recipe but the water usage is a lot for 3 eggs
any tips on how to make that steamed rice without a Rice cooker :) ?
I miss eating that "kind" of rice from when i visited Japan
I love this with natto. Subbed! Ta!
Mine was boiled egg I put the heat too high
It really brings back a lot of memories, ne?

+Cooking with Chef Dai arrigatõ
i dont know how to write it :"DD
Do you make the rice just plain or is it sushi rice with vinegar?
I love it ! So simple but delicious !! ;-)
I assume you turn the fire off before you add eggs, right?
Excellent !! Yet a new way for poached eggs... I will try it...
We're four, so I usually cook 8 eggs. Is maintaining the 5:1 ratio the trick ? So for 8 eggs, 3 litres of boiling water to 600 ml of cold ?
Great videos. Thank you
Simple
safe with american eggs?
Are you using pans from Le Crueset?
Close your eyes and start at 2:42
How many calories?
だいさん、氷のかわりに卵を冷やしてもいいんですか?

Hey Dai hope you can put some filet fish video on CZcams thank you
+زىمىن ئابدۇكېرىم Will do my best. I think I will try and upload a salmon video soon!!!! Thanks for you comment again!
Uh.. instructions aren't clear.. I wasn't sure i should turn on the heat once i pour the cold water or turn on the fire. 🤦
If you can lower down little more of the music your video willnbe perfect.
You've got an English accent, Chef Dai. Did you grow up in England?
+L2 I did indeed, North East London to be exact.
Harder than you'd think without any measurement things.
3rd and 4th was the charm. Think I got it down now.
isnt this half boiled eggs?
kinda, but if you half boil an egg, it will not have the same consistency as this one. This one is cooked slowly at a moderate temperature...
Is there any water-saving way to make this?
Frank Zhang add eggs to an ice bath
Frank Zhang. You can use a smaller container of course.
use as little/much water as you like, as long as the temperature is correct.
use onsen current
You could reuse the water once it has cooled down to water plants.
bro, u nepalese??
The music is too god damn loud
The egg doesn't looks like japanese. Japan has best eggs in the world. Full orange yolk.
try kopitam egg. hahaha
Raw egg is delicious than cooked egg.
We need water in raw egg dish.
I eat raw egg rice every day.
Why did boiled??
Raw is delicious than other.
It is symbol of freshness.
Surely you should NEVER put eggs in the fridge ?!
A lot of water usage for a bit of egg
Hmm seems totally different from my method. I guess it'll have to..I suppose :/
👍💯🤪❤❤❤
I have those chopsticks, they are terrible! They have almost no grip so I just end up buying packs of wooden disposable ones.
felixthemaster1 no you're stupid, cause children use them and have "grip" on the food, fkn idiot
What's your email fair

aw, seems like it wastes a lot of water, though :/

StariaL then don't take a shower but if you do, reuse it and drink it idiot lol
@@SecertlyMeAndProud you can alternatively put them into a bowl of ice water
Agree just use ice or I use left over water for garden
