  • Pork Shoulder Spit Roast - Iberico Cabecero - Smoked on the ProQ excel. This cut of pork is packed full with flavor. I hope you will enjoy this video recipe as much as I did.

    Recipe :
    Ingredients
    - Iberico Cabecero
    Ingredients flavored olive oil
    - Salt
    - Olive oil
    - Thyme (fine chopped)
    - Rosemary (fine chopped)
    - Garlic (chopped)
    Ingredients stuffing
    - Prosciutto di parma
    - Parmesan cheese
    - Blanched spinach
    How to:
    - Mix all the ingredients for the flavored olive oil
    - Butterfly the pork shoulder
    - Brush on some of the flavored olive oil
    - layer on the stuffing
    - Roll and ty up the stuffed pork shoulder
    - Place the pork shoulder on the spit roast
    - Make sure the fat that renders of the meat cannot reach the charcoal, otherwise your recipe will be Iberico Inferno
    - Roast until the core reaches 65 degrees Celsius or 154 degrees Fahrenheit.
    - Let the roast rest before carving it.
    - Enjoy

    I tried this on my grill last week. Absolutely delicious. My wife raved on the taste of the pork. She also is not a leftover person but this has been eaten for 3 meals and we will have another one this evening.

    That looks absolutely amazing. I do a very similar rub with a slight difference. I put my herbs, garlic and salt in a mortar and pestle and grind it all down only then do I pour my olive oil on it and mix it well. That way I get that pungent garlic-rosemary taste I desire. I've never tried the cheese+ spinach and prosciutto bit. Worthy of a try. Thank you !

    There's not a better roast on the planet....have made this 10 or 12 times and am making for family tonight. Just ridiculous! The smokey, nutty, crazy tender iberico is absolutely amazing.

    That pork shoulder was beautiful. Nice coloration. We can occasionally get Duroc here in the US. Not as good but close. Nice recipe and excellent life skills Chef.

    Have you thought of putting the seasoned olive oil on heat prior to the meat so the spice can infuse more to the oil?

    Just to confirm. Did you have a normal proq section in between the bottom and your rotisserie section? And you left the lid off for the whole cook?

      Arco Vogel Ik had de deksel er af. Dus 2 stacks van de proQ excel 20 en dan zonder deksel. Is voor mij makkelijk. Als je wat minder brandstof wilt verbruiken, dan kan de deksel er ook gewoon op. Voor mij is het makkelijker onder ivm filmen. ... en lekker om naar te kijken. Het is toch ook wel een stuk show
