The difference between this and an American fine dining experience is that this probably tastes amazing as well as looking amazing. This is an amazing piece, one of the most spectacular presentations I’ve seen in a long time.
先付けが素晴らしい、少量でこの品数出してくれるだけで嬉しいのに器も良い
他のメニューもこの値段で出しては大丈夫なんですかという食材ばかり(食材だけじゃないですが)

It almost reminds me of looking at my grandmothers old hutch with all her delicately crafted Knick knacks. Except inside each are different comfort foods that bring back floods of nostalgic memories and comforts from over the years.

At time stamp 10:05 the chef serves fish with mushrooms. Does anyone know what type of fish? I have seen it prepared the same way, finely sliced, but broiled and torched before in these videos. Do you know what fish this is?

Almost everything wasn't completely cook. Lots of people eat raw seafood.

八寸盛り付けやり過ぎじゃね
すごすぎて、逆にちょっと引く。引き出しの菊の花は多過ぎかと。○式の出棺前のあれを思い起こさせる。上段2品を引き出しに入れて、菊の花さりげなく少量添えた方がカッコよい。ススキや紅葉、銀杏の葉を添えたりしてもよい。どうせなら、その場でむしって茹でてだしてほしかったな~
