Food Recipe : I empty and break up a packet of Soba Teriyaki noodles into one of those Soup n Store bags from Lakeland. Put the little sauce thing in but don't open it yet. Also put in the bag either a chopped up pre cooked sausage like the Matteson's ones or take a tin of Mackerel or Sardines. All you need to do then at camp is pour boiling water in the bag to cook the noodles, drain off the excess water, mix in that Teriyaki sauce, then add the sausage or fish. Mix up in the bag and it is really nice and filling. Costs about £1.50 and tastes way better than the £8 freeze dried ones. 👍
Purchase a UCO candle and buy some bee's wax candles, the white candles contain petroleum byproducts which give off carbon monoxide, the bee's wax candles just give of CO2.
You sometimes forget how beautiful the uk can be.

Freeze dried vegetables really help make it easy to create better meals. For example freeze dried veg, a Knorr side and some kind of meat makes an easy backpacking meal.

Top tip Paul to stop your mittens flapping around and getting tangled, get two large inch wide elastic straps, put them over your wrists (outside of coat) then tuck mittens under them. Keeps them out of the way and flapping around.
A nice simple meal I use in a reusable dehydrated meal pouch:
Moroccan couscous:
Per person
100g Couscous = 350cal
1 heaped tbsp dried cranberries = 20cal
1 heaped tbsp chopped walnuts = 50cal
7 chopped dried apricots = 50cal
1 tsp tagine spice mix
30g diced chorizo = 135cal
Total 605cal
Add 200ml boiling water, stir and wait 5 mins 👍🏼

How does a frozen meal pan out Paul?
Home-made dehydrated cuisine:
I made a tomato, spinach and corguette sauce, dehydrated it in the oven.
I paired it with sosmix (a dehydrated veggie sausage mixture), some instant mash, and fresh spring onions.
Made for a very heart meal for two, the sausage mix is pretty sticky though, so it helps to have an easy way to wipe and rinse hands
Huel:
I use the cold drink powder, mixed with instant coffee and cocoa powder as my lunches. I can fill the mixer bottle with water from a stream, and I find it also makes sure I drink plenty during hikes
I also use a lot of the hot huel for evening meals (and lunches when I have a busy work day). Some of the flavours can be a bit hit or miss, and my wife isn't keen on some of the textures, but I really like the Pasta based ones, the korma, the madras and the chilli.
I mix it up in either a collapsible mug, or lightweight empty soup pot, I take pre-measured ziplock bags, dump it in, then add boiled water and wait a few minutes, job done
I have a few bags with 1 or two meals left in them, I think I'm pretty local (Rivelin area) so I could drop them off to you if you wanted to give them a try
Hi Paul, like you I have eventually come round to a Hilleberg for a winter tent. Nearly 20years ago I invested in a Macpac Minaret 4 season tent and it was great in Skye, Toriddon and Wales as a bombproof, light, 4 season tent. I graduated to the Olympus when I became less bendy, it is superb. Macpac are rather underated in the UK. Us old boy winter hikers used to refer to tents as "winter tents" or " four season tents" or " bombproof tents". Paul take my advice and get yourself a bombproof tent. I now have an Akto, which is great and has very few compromises, it is a bit heavy, Good luck with the Nallo which is heavier. But please tell your numerous people that if they are going winter camping, upland in the UK, please get yourself a bombproof tent, they are out there and they make you safe.
Too bad macpac don't sell internationally. Only choice is to order from new Zealand. Although the prices are still fairly cheap even after taxes. Other problem is that they are out of stock almost always
When I can do, I'll get the staika or allak 2. Love the geodesic designs. And being tall I struggle to find a good one I can sit up in! When I went instore at go outdoors, they had buy 1 get 1 half price on all dehydrated and wayfarer meals so work out better value. 1 girl and her dog did a dehydration video and her mum makes what looks like a cracking spag bol!
I dehydrate all my food
Nesco Fieldmaster with 12 trays and liners for liquid soups
It is so simple
Just cook your favorite food dishes, making sure all the vegetables and meat is finely chopped
Put it in the dehydrator and leave for 10 hours
Put portions into zip lock bags
The savings are amazing
And you get to eat real food
Rehydrate by slowly cooking in hot water for less than 5 minutes
Hi Paul great video, however, I would recommend against microspikes in winter conditions such as this on the hill. This is full on winter walking/mountaineering and you would be better with full crampons and ice axe and knowing how to use them.
Microspikes may get you into a place where you think you are OK, but may not be able to get you back out which crampons could. I have no doubt that Mountain Rescue would be critical of anyone considering a day on the hills in these conditions using microspikes. Crampons also don't fall off as easily as micropsikes.
Just trying the huel. The portion sizes are pretty small, I would need to double up at least... best and cheapest method for multi day trips for me is pour and store bags, one for porridge, one for tea, so not essential to wash up as you fill with boiling water every day. Dry a bag of veg in a dehydrator, then add 2 bags of noodles, soya mince, veg, and flavour. Boiling water into bag and let it sit in a thermal cosy for 15min. Repeat for porridge in morning! Cheap and healthy ish....

I replaced em and now we use electrical cable ties to strap em over the top of the boot foot. Not let us down since.✊️👍

Use the huel hot food when I am camping, it's good and works out cheap, but you do have to order in bulk. It is pretty tasty and proper food! Just a bit of extra hassle cleaning the pot out!

As a new wild camper I have watched all your recent CZcams uploads. And I have got to say it has been the most entertaining to date. Grade A for effort and tip my hat for giving it a go. Nail biting stuff at times. This will encourage people like me to also give it a try. Too marks

I have a nallow 2 20years have to say in those conditions I’d be thinking of double poles or stronger poles for serious winter mountain camping, have to agree that it’s not reasonable to expect super light tents to do well when the wind is strong enough to take chimney’s off and tip over high sided vans over.
Bio chef from evil Amazon is a good food dehydrator .
It’s actually quite a simple process lots of good Australian and American you tube info and several publications one to get hold of is The dehydrator Cook book for outdoor adventures by Julie Mosier is a good place to start, best thing is you can make meals that are big enough rather than trying to scrape the last rice grain out of the corner of a too tight foil bag😂
A lot of new backpackers seem to assume that expensive pre cooked ready made meals are normal such is the power of CZcams!
As an afterthought my equally elderly Akto would be fine in those conditions at 1.6 isn’t heavy tho you will need two mops for the condensation. No perfect tent sadly

Parking is free if you’re a National Trust member. Membership pays for itself several times over in parking over the year at loads of places, especially in the Lakes.
Cous cous, red lentils, your own spices of choice, bit of chicken or beef or vegi stock cube. Salt pepper. 5 minutes in a pot, let it rest jobs a bloody good un !!!
You can always add meat proteins or fish as to anyones liking.
Light cheap and easy !! Works for me
I find pre bagged meals so salty, too salty even when we lose the salts while walking

Hilleberg Nallo 2 is the conclusion I came to, having also sold my Soulo some time ago. Nallo is the same weight as the Soulo, I’m sure as strong but more space and a more useable vestibule. I’ve also got a second set of poles, so should stand just about anything!
"Tent regret". I used to get those all the time when I was 12 and 13. Always in the middle of class at school, during a service at church or at the dining table. No matter what I was thinking about I'd get tent regret for no reason. This was a hard-core video. You're ready for the Antarctic. I don't know how you stay so focused and cool. Brits are good at that. Cheers.
Interested that you might be considering a Nallo 2 for your adventures. My wife and I ( in our late 70s) continue to wild camp and have successfully used this tent for many years and can thoroughly recommend it. We only do 3 season now but have always found it very reliable and comfortable for two and the large porch helps in this respect. If you’re intending to use it for solo use then you will find the space palatial compared with the space you had available for this trip. We only have the one tent and although some may consider the weight too excessive for summer use we find the comfort and robustness worth the extra weight. We’re nothing to do with Hilleberg and this opinion of the tent is entirely personal. Thoroughly enjoy the videos, keeps the interest going until we can get out again.
Wind speeds on weather forecasts are for ground level only. If you’re heading in to the hills you should double the speeds. If you’re up a mountain you also have more compression near the summit, hence gusts more than double the speed. Great video Paul 👍😀
Doesn't work like that. Count the isobars across mainland UK on the met office hourly surface pressure charts. Every one that crosses uk is 10mph at 400m height approx.
@@ianparker298 It’s a rough guide. No one is going to be looking at isobars charts in detail and even if they did they’re not accurate in mountainous regions.

Wind speeds on mountain forecasts (such as MWIS) are given for the summits, not ground level. Whatever people do, don’t venture into the hills on the basis of normal forecasts.
@Miss Ogyny yeah agree but they only cover specific areas, not say the Ochils or large areas of the pennines. Its rough, and an average between wind and gusts

Spikes at 3:50 - not quite as helpful as a GPS coordinate, I know. That looked rough, but end of day (start of the next one) you have to marvel that such a fragile structure actually kept you safe and dry, eh? Note to self: kick snow around the edges (or leaves) as a matter of course…

Regarding the tents, I think the Nallo 2 will suit you. I have a Nordisk Oppland 2 which is a very similar design to the Nallo 2 GT. I chose it because I wanted a 2-person tent that would be a palace for one, easy to pitch solo, with a large vestibule space. What I was surprised by was just how stable it is in very high winds. I've been in situations where I could hear the wind howling outside but inside the tent was completely still, which is quite eerie. Being a tunnel design you pitch it with the end facing the wind where possible, but if the wind will be especially strong and it is going to turn around in the night, or if there is no pitch with the right orientation, adding extra guy lines can help stabilise it against cross-winds.
As far as food goes, I use a variety. I often take fresh food for the first night away. Dehydrating can be a good way to reduce costs if you do a lot of trips, like you do. You can make it easier by buying some ingredients already dehydrated in bulk. I tend to mix up meals from a mix of home-made and prepared ingredients, which reduces costs and means you know what's in the meal but is also quite easy. Dehydrated onions and garlic are especially useful if you can find them - they aren't so much fun to prepare! Catering supplies stores sometimes have them in bulk bags. I buy plain freeze-dried beef mince to add to meals, since I feel the meat is the main food safety concern so I don't mind spending the extra for freeze-dried there. Dried herbs and spices are probably in your pantry already. If you have a dehydrator, celery is really useful as a flavour booster and it's often hard to use a whole bunch of celery at a time, so it makes sense to dehydrate some of it. Tomato doesn't dehydrate well (the flavour goes off) so if you want tomato flavour I'd recommend taking tomato paste in a tube. Another good idea can be to dehydrate leftovers. If you have leftovers from a meal that will dehydrate well, instead of putting them in the fridge to get forgotten about, put them in the dehydrator overnight instead. That's the easiest camping meal ever! There are some good groups on FB dedicated to dehydrating food if you want to learn more, usually from a food storage/disaster prep point of view rather than hiking but they have great info.
A good video that highlighted how even seemingly reasonable conditions can be challenging - that wind looked pretty rough at times.

I am envious every time I watch you cook inside your tent. Here in east Tennessee, USA, if we cook in our tent we stand a very good chance of being attacked by a black bear. No food or food smells in tents.

One of my favourite parts of the Lakes! Dubs Hut is a positively luxurious bothy just below Fleetwith Pike that I spent a night at with good friends a couple of years ago.

I can report that Huel is bloody good, certainly in terms of its nutritional quality. I haven’t tried their hot stuff, but I reckon it’s worth taking a look at.
Agree. Huel Powder, RTD and Hot and Savoury all good imo. Great mix of micro and macro nutrients.
I love Huel. I drink the vanilla shake black edition (extra protein) most mornings and sometimes eat their savoury offerings for lunch. The Mac and cheese is tasty and with the addition of some sausage/chorizo would make a great backpacking meal
I was just up in the Lakes with a Nammatj 2 last week and although it’s a bit heavier … it was really nice having the extra space on a long cold night. Not to mention it was rock solid during the early evening when I had wind. Enjoyed the video as always! ATB

I hope you get the old micro spikes back. I think once you are on any type of mixed ground there will always be a risk of them coming off. Crampons every time for me. There is a weight penalty, but that is worth it for the security they offer in staying on. Funnily enough I also watched a video yesterday of a chap climbing Beinn Dorain, near Bridge of Orchy, and he lost a walking pole. Fortunately he bumped into someone on the way down who had found it, so I’ve got my fingers crossed for you.

You should even take a look at Fjällräven’s Abisko series. Great tents! The View 2 is incredibly versatile, very strong, can even be used for winter. Zero condensation and some nifty functions!
Five bloody quid for that! I gave up on dehydrated stuff years ago, If you are only away for a few days, tins of curry, less fuel, quick to heat and well tasty. Stamp the tins down and no bother to carry them out.

It's really good to see you out for a big walk and top notch night out in the tent. I'd be kicking myself for leaving the microspikes out in the countryside too, but at least it wasn't a deliberate act of littering. I'm sure someone will pick them up in due course. I hope your feet have warmed up now, after that icy dip!
It’s a nice walk but not a big one, I’ve been there many times from Honister and it’s only a couple of miles. Stunning views though.

I have nallo 2 and just bought soulo. Nallo has really good room for even my use when i go to reserve army training and get full gear. Most can be inside and some get to be in the vestibule. Or if there a 2 people them you probly need tarp sometimes depending on the stuff you have.
I got to say when I got to use the restroom instead of going out side I like to use the leftover freeze dried empty bags for going pee. It seems to work very well just have to make sure that the Ziploc is closed so to told pee inside the bag without spilling the pee inside your tent, but it does seem to really work pretty well.
If I was looking for a 4 season tent I think the TN Voyager would be up there. Well proven design. Many years ago I had a Vango copy think it was called the hydra and during a storm it was one of a couple of tents left standing, bit unfortunate as it then required me to take in another camper. Only reason why I sold it was I wanted a view whilst lying down so a got a TN Solar.

The problem with huel is if your only going to use it for camping is once the bag is opened it has a 1 month shelf life I would end up wasting half of it.

Excellent video Paul. Love your never say die attitude. You can't beat Hilleberg in my book. I love my Soulo. I don't think I'll ever sell it. Granted it is heavy but it gives me peace of mind. That is priceless in my book.

That's why I've never understood why you always have a camp on top of a mountain. You should camp below sheltered from the wind and climb to the top during the day to descend again. Except when you want to test the equipment and yourself. :) But it was an amazing adventure.
One good thing about a smaller tent is it keeps you warmer
If you want a meal replacement just get something like a instant mass protein shake and then rock some emergency noodles because that huel crap don't have the protein you'll need during a hike really, I looked it up when I started back at the gym because I couldn't find the low calorie protein powder I used to have

Hi Paul, I want to try winter hiking for first time this year in Uk and Scotland. This is some of the stuff I recently got. Will this be fine? I will try it out in my garden first.
Winter camping gear:

- hunka xl bivvy bag
- Oex leviathan ev900 sleeping bag
- Oex sleeping bag liner
- Oex traverse 5 xl sleeping mat
Might be small but for the weight it is a good tent that and can take a battering. Good vid well filmed .
Tent is shaking to bits but Paul says “tents holding up pretty well though” 😂

Good video Paul, but I can tell you as a long time scarp 1 owner (4yrs+) that it can handle challenging conditions very well, as long as it is pitch correctly. Mine has seen winds up to 50mph (not on purpose) with zero damage.
I had the Nammatj 2 as well as a Soulo. I made the right decision by selling the Soulo but think I could have kept the Nammatj.
Now I swear by the Crux Assault which works fabulously well for and my Dobie.
For two of us and the Dobie I use a Crux Shadow. These are not perfect but they meet my year round use (camped on Snowdon over New Year in howling wind / sleet). Worst I’ve experienced has been gusts over 80mph and the tent took it well - using combo of Delta pegs and 10” twist MSR pegs.
I always carry one of the very lightweight yellow plastic peg hammers off Amazon as well. I swear by that: anything heavier can destroy your pegs yet it pounds the pegs into frozen ground.
