Let's make elderflower cordial

- The sun is out and so is the blossom on my elderflower tree, perfect for making cordial. This syrup is great in sparkling water, over your yoghurt or ice cream and in your gin and tonic.
To make:
-Pick the blossom on a sunny day, around 12 flower heads
-Shake the blossom for bugs
-Take the blossom of the stalks, you can use a fork for this or use your fingers
-Pour the juice of two lemons and 1 litre of boiling water over the blossom
-Cover and let sit for 24 hours
-Strain the blossom liquid through a muslin or jam cloth
-Add 300 grams of sugar
-Bring to a boil and let simmer for a few minutes
-Sterilise a jar, I like reusing pasta sauce or jam jars
-Pour the cordial in the jar, let cool before use
As there is no citric acid in my recipe the cordial keeps in the fridge for up to a week.
