- Being far away from home isn't easy, so I try to make my time here as enjoyable as possible by cooking foods that I love from back home! In this video I show you how you can still make the best ugali, sukuma wiki and beef stew while abroad and which foreign products you can use to substitute your recipes.
This food brings back memories from when I was younger. My Kenyan mum would always make this dish for me and it is amazing, however being in foster care meant I've lost slot of my culture. Thank you very much I now can carry on my culture as a Kikuyu making my favourite food 🇰🇪♥️

Whole milk or a little bit of cream makes the meat really tender and juicy, if you add it after the stew is simmering in the juices but it takes a few hours

Hey Mike! Lol no worries. Royco is a company that makes beef bouillon cubes back in Kenya. It’s great especially when making beef stews to get a richer flavor. Hope that helps with your question!

About how much cornmeal do you use?
When making ugali, I use the water as my guide for how much I’m making. The water you put in the pot is essentially how much ugali you want to make. The cornmeal doesn’t have a specific measurement because you add as you go while monitoring the consistency of your ugali. So I pour small amounts of cornmeal while simultaneously breaking the pieces apart with my wooden spoon to prevent clumping. Add slowly ensuring that no cornmeal pockets are forming until the ugali thickens and you can just focus on breaking apart all the cornmeal pockets.

Kenyans in general do not appreciate too many spices in their food and this doesn't make it any less tasty! It's all about quality, organic ingredients and the cooking technique. Plus we love the original taste of individual foods and do not disguise this with gazillion spices. Hope that explains
