If you already set the deck in an alternating order, it doesn't matter how many times you cut, it'll always stay in the black/red order. Try it for yourself. Cut a random section of the deck and check the top card of one cut, and the bottom card of the other. You'll see for yourself that it always stays the same.

no it doesn't have to be 1 to 1 or anything specific. Since each pile is only red/black there's really no reason for it to be shuffled in a specific order. Doesn't matter where the spectators cards end up either since tthey'll reveal themselves during the flip anyways.
