I guess the steel deflector plates are a decent purchase... bit expensive tho, eh!!

Haha good stuff everyone fucks things up from time to time. If I’m doing something fatty I always just use a drip pan now and sit it on the deflectors. Picked up some cheap trays on eBay and they do the job nicely, just remove them and clean out after each cook.
Out of interest where are you getting turkey from this time of year? I love smoked turkey but only ever see it in the shops around Christmas.
