That's fantastic! What kinds of health changes have you experienced in the past year as a result of your transition?
I love sweet potatoes! I shared a video on my CZcams channel the other day about how I cook and freeze sweet potatoes. Looooove doing that- both so they don’t go bad, and so I always have delicious starch ready to go. I actually love eating them partially frozen…like super creamy, sweet ice cream.
I freeze my cooked Okinawan sweet potatoes too, they freeze beautifully!
How do you eat them partially frozen exactly?
I defrost them in the microwave
@@NaturallyKarli I thaw about 45-60 seconds in the microwave and it’s then like I eating a frozen banana….it’s not hard as rock…more like a popsicle texture, but way creamier. You have to try it!

Karli, I love your simple meals! Cooking does not come naturally to me so when I find recipes that have soooo many steps and sooo many ingredients, I feel a little overwhelmed by it. I need things quick and easy. But I have no imagination when it comes to food so I still need inspiration, even for simple and easy. Your video here helps me! Thank you!

You can bake sweet potatoes and freeze them! I personally just put mine in ziplock bags and they store so well. Then you can microwave them when you want one and now you have a quick go to meal when you’re in a pinch! :)

I need to try this salad prep hack! I saw the cilantro, that takes it to another level for sure. Arugula is nice as well for a punch of flavor.

Noooooo, you absolutely got to try the purple sweet potatoes in the oven because they are a thousand times better.
Also a hint for storage- if you put them in a brown paper bag in a dark cold spot they will keep for over a month.

I have trouble with the purple sweet potatoes, they have a floral after taste that is almost perfumey to me. Did you find the same?
Awe, congrats on the pup! And yes, dealing with another baby in the house is a big transition.
I don’t get a floral taste with the taters at all… they all taste like cake to me🤗

Really enjoyed the video. Great idea on pre-cutting bulk veggies for steaming. Especially liked the tip about the towel to keep the salad fresh. What are your typical ingredients for your salad?
Glad it was helpful! My salads always consist of various lettuces, cabbage, sprouts, onions, peppers, jicama, tomatoes, mushrooms, herbs, etc.

I ordered the Okinawa sweet potatoes from the website months ago and loved them. I bought the regular mixed box. I was afraid to buy the off-grade in case they might rot, but the price is so much better! Did you order the off-grade potatoes? If so, were they okay?
I just received the mixed box and they are just as amazing as the regular ones. Just oblong and few blemishes here and there 👍

Hi Karli, I am allergic to sweet potatoes and potatoes any very similar substitutes? I love the dense cakey nature of them and it pains me that I can’t eat them. Any subs would be amazing.
Yes! Squashes have a very similar texture. Kabocha squash is my favorite but there are many tasty squashes. Would these work for you?
Last meal? That was lunch. Not being funny, because that’s not enough calories, fat, or protein for an adult woman. Dr. Furman says, and I’m quoting here, “Even a whole-food, plant-based diet could be too low in protein if it is heavily focused on grains, potatoes, and fruit, and low in beans (including soybeans), nuts, seeds, and greens.” If you’re going to do WFPB, you need to add in more food and calories. Minimally processed tofu would be a great addition.
Oh yes, my meals are loaded with beans and greens. But you’re right, I wasn’t eating enough. Now I get 3 meals per day 👍

@@NaturallyKarli if you bought an animal then you're not vegan. You are plant based that's great but know that in the background these animals suffer who are bought like this for money plus you will feed them other animals how is that fair?

@@NaturallyKarli i don't think buying an animals is necessary to live. It's a luxury and a privilege the one that destroys so many lives. These animals are bought and ones in shelters are killed, you will feed them other tens of thousands of animals. How is that anything related to the concept of veganism, it's not.
Actually we rescued Luna from an animal shelter. Cats eat other animals regardless of the source. I understand where you are coming from but I feel as though your efforts may have greater impact in areas where animal welfare is truly at risk, perhaps on a more global scale. I do not call myself vegan because I claim to rescue the world from animal cruelty. I simply use the vegan term to explain to viewers and others interested in understanding what I do not personally consume, as this term has evolved in the past decade or so. Thanks for your concern.
