  • This talk was given at a local TEDx event, produced independently of the TED Conferences. n January of 2012, Megan Kimble was a city-dwelling 26-year-old-busy and broke, living in a small apartment without so much as a garden plot to her name. But she cared about food: where it came from, how it was made, and what it did to her body. So she set herself a challenge: She would go an entire year without eating processed foods. In this talk, she discusses what makes a food processed and how those processes impact our bodies and communities.
    Megan Kimble is the managing editor of Edible Baja Arizona, a local food magazine serving Tucson and the borderlands, and is a regular contributor to the Los Angeles Times. Her book, Unprocessed, about her year of eating only whole, unprocessed food, is forthcoming from William Morrow in 2015. Follow along at megankimble.com.

    WE as Americans NEED to wake up ..with increasingly high insurance costs and medical costs.. we can cure a lot of our disease by the quality of food we eat. THANKS for putting this out there.

      @@JohnBobbit America doesn’t have free healthcare, so most of us rely on medical insurance to cover some of the costs of going to the doctors office. After you go to the clinic or the doctors office, we usually get a receive a bill that requires us to pay whatever the insurance didn’t cover, which is oftentimes very expensive.

      It is cheaper to eat junk or fast food, you can get a burger, chips and a drink for $2!! Buying healthy raw food IS expensive, but you can use the leftovers (if any) for other meals and that helps!

      Because sugar is so addictive and companies want you to get addicted to their products. So many foods don’t even need sugar but they add it anyway.

      +João Zamae I recently walked into the local large grocery store here in Florida and the amount of obese unhealthy looking people was really sad to see, pretty grotesque also.
      I thank 'GOD' i learned how to eat healthy when i was in my early 20's . I still eat some crap now and then, but the majority of Americans eat such horrible processed 'product' that it is unreal. That includes MOST of my family members.
      They will avoid videos such as this one like the plague, dismiss it as stupid or quack - A huge % of Americans are dumbed down by TV ads and fake foods . It has hurt the society so much. But health is coming to the forefront thanks to internet and social media. It's a war

      I so agree with you. People are extremely lazy when it comes to the choices they make in eating. My husband and I eat a keto diet now, we've lost weight and both of us have never felt better. In fact, my auto-immune disorder symptoms are all lessening a lot and it's given me my life back as I was completely debilitated before. No sugar and very few carbs.

    I'm so happy I don't care for sugar at all!!! I love hot food, addicted to tobasco sauce.. Sweets just don't do it.. I've literally trained myself to become disgusted by sweets..I became vegan and never looked back.. My health has never been better.fibromyalgia gone.. headaches gone ... Inflammation gone.. moodiness gone!!! I love life!!!!!!

      I can second this. Super inflammation in my stomach, high blood pressure and cholesterol. 2 weeks eating raw whole food plant based and inflammation gone.

    Four points:
    1. Join the CSA
    2. Read the ingredients labels
    3. Go to the farmers market
    4. Ask questions of the people and companies that sell you your food.

    I enjoyed your TED Talk. When I was young, my family was on food stamps. My mother and grandmother made breads, bought meat, fruits and vegetables at Farmers Markets. We took the bus everywhere. We were poor, but ate very well. Many families substitute convenience in lifestyle for better food choices. Eating well takes time. The consequences of eating poorly are heart disease, stroke cancer and obesity.

      @@isaacfernandez4841 A couple of years ago I read a great little book on natural healing called ‘My Physician, Myself’, written by an older man who cured himself of a number of maladies without medical intervention. It’s available on Amazon and well worth the read. You might also look into the work of Luigi Cornaro, a Venetian nobleman who lived to 102.

    Follow the Blue Zones rule: if something you are buying has more than 5 ingredients then don't buy. If you don't understand what one of the ingredients is then don't buy it

      That's overly simplistic. Without the knowledge of what is nutritious and what isn't, we're still stuck at square one. For instance, when you think of soy you think oh that's healthy. Soy after all is used to make soy milk and tofu, two very highly regarded health foods. But one video I saw from another CZcamsr said soybean oil is actually carcinogenic. Leads to austism and Alzhemier's disease. So how can soy milk and tofu be good and soybean oil is bad? Unfortunately unless you have a PHD in the sciences you're left with following the advice of these professionals and you have to then wonder if they're lobbyists for the food company or do they truly have our best interest at heart.

      This isn't good advice. It might seem like that in theory but it's simply not true. How do you define an ingredient? Why 5 ingredients specifically? Why not 4 or 6? What about something like a bag of mixed fruits and nuts? That's going to have more than 5 ingredients. Understanding what an ingredient is doesn't make it healthy, nor does not understanding an ingredient because maybe you haven't heard of a specific fruit before or a specific bacteria in yogurt. We should be avoiding processed food in general, but this isn't the way to go. A cartoon of juice declaring that it has just 2 fruits and no added sugar etc. still isn't healthy.

    Great talk! I've just switched to unprocessed foods over the last 4 weeks and I have never felt better - and by that, I mean I eat vegetables, fruits, nuts, meat, eggs, yoghurt, milk, butter, a little sprouted grain bread etc. I have more energy, no water retention, clearer skin and I feel full which prevents cravings. It feels good.

    I too appreciate natural, organic, unprocessed foods, but totally crave sugar. I can go off sugar fro short periods, but just can't seem to kick it. Let's intend for that to change now! Thank you.

    If processed foods and sugar foods are not in the house you can’t eat it! That’s what I finally figured out! If I only have organic raisins and carrots that’s what I eat. Tastes like dessert !!

    A lot of good points are raised in this presentation. Especially on the need to support our local farmers who responsibly grow our food. That is the only way to go if we must stop process food from coming to our dining tables.

    During the seventies I read Sugar Blues by Wm Duffy and was shocked to discover hidden sugar in the brand of toothpaste we were using.
    The good news: that book was the first step on my my journey to a Whole Food Plant Based lifestyle.💚

    This is great. As a seasonal eater and a CSA member myself, I've been saying this for years. Unfortunately I wish she mentioned food deserts and poor communities without access to locally grown food. I feel very fortunate to purchase my veggies and meat from a farm that is in my neighborhood.

Where it came from, what it ate, all the rest of ingredients? About what that's actually doing to the health of our pets?       Read the book by Joel Ardis Horn called DEAD PETS DON'T LIE. You will be horrified to know what is in your dog and cat food. This is why the tumers and deaths of your animals. It's diabolical.

    it doesn't take too much time to grow food at home. you can even configure window gardens if you have a sun facing window but no land. There's lots of info online on how to do this. Just don't forget to water. You might not be able to grow ALL your food but enough to lower the bills and know where some of your food is coming from/how it's produced.

    Moderation, moderation...then we all die! You can live healthier and MAYBE longer but don't get to stressed(it kills) about it all. I eat most foods in MODERATION. Will have a beer or glass of wine with a nice filet and baked tater. Sometimes i even have a piece of cake or pie for dessert :)

      Instant noodles are about the worst thing you can eat.
      At the VERY least, dump.about half of the flavor pack. It's LOADED with salt.

    WFPB all the way for me, because environmentally it’s good, for our health it’s the best and I’m not responsible for the killing of sentient beings. Even people on food stamps could learn to cook this way and feel wonderful as the weight drops off and you feel so alive. Blessings

    Watched your video while running on treadmill, so am vegetarian 🌱 and 100% agree with your thoughts, even the part about meat, if you’re going to eat it - at least make sure it’s clean meat! Unfortunately, everywhere is media encouraging and enticing processed foods. Such as the ad immediately following your video was an ad for Arbys 🤦🏻‍♀️😢

    Real unprocessed foods don't include brownies! It includes eating a mango, or watermelon, or greens, or nuts, or seeds, or berries, just like they came off the vine, tree,, or out of the ground.

    Awesome talk! I'm also so grateful that our community in Oregon has a year round farmers market plus a seasonal one, and several CSAs. I shop there first, and appreciate the variety, quality, that I know so many of "my" farmers. I encourage others to check it out, and try to add more local food to their plates

    I don’t consider a watermelon as a processed food. Most of us know processed food as pre-made, pre-packaged items that are made from too many unpronounceable ingredients. I have a rule.....don’t drink your sugar like she said. No soda or fruit juice.
    If your hamburgers are made well they don’t need ketchup or mustard. Use dry rub spices for your ribs and chicken instead of sugary sauces. My other rule that I’m working on it is: if I want something sweet I have to make it from scratch.

      You can grow tomatoes, green peppers, hot peppers and such in any cold state. On your porch. Just need a lot of sun, a lot of water and use self watering containers. Very big ones. Keep the away from the building, they'll grow 9 feet up. Water until it backs up the hole daily.

    A bag of rice is cheap considering how many meals you'll get out of it. Frozen vegetables also last. You can get a lot of chicken for not that much either. If you fix your meals, they are cheaper than fast food. One banana is $0.20. Five bananas are filling. Throw in some nuts and you're full.

    This is such an important topic in so many ways. I think a lot of people know that processed foods are not as healthy as whole foods but I think most of us rarely consider how eating imported processed foods impacts our local environment and the local sustainable farmers. The phrase vote with your dollar is very true in this sense, we should all do our best to buy local foods.

    Me & my husband and 2 grown children and thier spouses have been off all animal products for one year (meat, dairy & eggs) and the health benefits we have seen are amazing. My iron levels have increased (after a lifetime of low iron), my kidney function is back to normal and I am off thyroid meds. Collectively, our family has seen numerous health issues improved & reversed. All animal products, no matter if they are organic or not are bad for you. They all contain the hormone IG 1 which fuels cancer. If you have not tried a whole food plant based diet please give it a try. This is the root to the majority of health issues plaguing society and you can change this by what you put (and don't put) at the end of your fork.

All the Dr's we follow have raised their children like this and they are all raising their own children eating this way and they are all super healthy. I also worked with a woman whose entire family ate this way since she was a young child and her children who are now adults have no health issues and rarely get colds. People say things like this because they are scared to give up their food and are extremely uneducated about this way of eating. I was once like that myself.

      @@craigmcneil3987 eat organic if possible and wash produce well if not able to. Everyone in my family has seen so many improvements/reversal of various illness. This speaks to the fact that plants have more nutrition than what some articles may state. A person also needs to be aware of who is writing the article. I agree that the soil is not what it used to be to some degree but still a lot of nutrients.

      Plants do not have nervous systems, therefore they do not suffer. If you need indeed hold plants in higher regard than animals that factually feel just as we do, than research the amount of plant matter that it takes per pound of animals flesh. If you are indeed a plants' rights activist, than not eating animals still makes the most sense.

    If it comes out of a box, can or a window try and avoid it. Carrageenan, high fructose corn syrup, sugar, grains and sodium are all excessively high in processed foods. These are not good to take in large amounts and are either absent or more balanced in non-processed foods. However, most fruits grown over the past 60 years have been modified to contain 5-10x the amount of fructose and sucrose to make them taste sweeter. This amount is a bit too high for a healthy diet.

    I agree with a few points that she made. But she really needs to take another look at what she called unprocessed foods. She used processed ingredients to make a "home cooked" food or dessert. It's been proven that that butter(dairy) and meat is much better cut out of a person's diet, with very few exceptions. It doesn't matter whether an animal was raised locally or not, it still has a negative impact on the environment.

    So here we are some 100 years after Teddy Roosevelt and Upton Sinclair... Instead of cutting our dairy and meat products with chalk-water and formaldehyde and worse, we're now using 50+ varieties of fructose to dilute the nutritional quality of food and keep consumers coming back for more. Just because fructose is found in nature doesn't mean it's good for you in high concentrations. At least we have truth in labeling... we just have to follow-through and act on that knowledge (instead of our fructose-induced dopamine addictions).
