Wow it’s amazing to see this kid in his rhythm just making the bread. People can’t wait for it they just come in off the street. I would love to try it fresh from the oven. The machine they use looks like it has been around for a long time. The ingenuity of it is pretty cool. At first I couldn’t figure out what the bottom level was for but he just uses it to slam the dough onto the oven rack. But he has to do it fast enough that the dough doesn’t fall. You have to be young lol it must take a long time to go through all that dough.

There are many CZcams channels of Iranian nomads (Bakhtiari people) who often show making this bread. I agree - very skilled and much thinner - they thin the rolled dough by twirling it in the air. Worth a watch.

It's an impressive and interesting video, but it is also a catalogue of safety violations and dangers. If he slipped and put his arm in the hook, it would take his arm off without slowing down. The electrical wiring and the exposed belt would have a business closed in a first-world country, but they are nothing compared with the rotating dough hook.
