I must say an easy way to cook steaks is sous vide, and then after its "cooked" slap it on the outdoor grill for a few mins on each side. You can put the herbs and seasoning in the sous vide bag to cook it in! Yummy. 👍😁
In the future try cooking your rib eye (tomohawk) with the reverse sear method. low and slow to temp. then sear and the end. Rib eye is a Prime rib which is best cooked slow. try cooking it in the oven at 225 to 250 degrees til you get your internal temp then sear. I think you will be more satisfied.
Beat me to it. I do mine in the oven at 170 for an hour or so until internal is 115-120ish and then sear. Also that big outer band of fat won't render, so I trim it way back before cooking. Also, because of the thickness I dust in seasoning after slicing.
@@socomon69 Try salting it and seasoning 1 hour before you you cook it. Just use a good salt. Something that doesn't have iodine in it. Sea salt kosher salt, etc...
@@gregchrist5090 I dry brine (salt) the night before and season before cooking. I'm saying that due to the thickness I do an extra dusting just before serving. It's a thick piece of meat and can handle a bit extra
Just discovered your channel and since I did an AK and then spent time RVing with family in the Pacific NW, this just gives me flashbacks of what a great time We/I had in May/June 22! I would SOOO have a beer with Shawn, he speaks the right language and yet can pull off technical tasks as well...and THEN cook a tomahawk steak! Well played Shawn, well played! Great channel y'all! Cheers!
As always, another great video. Thanks for taking us along!
Thank you for these great videos! I have been watching for a couple months now, still catching up on the older ones, but have enjoyed each and every one. The scenery is fantastic and I really enjoy the music as well! Keep up the great work!
@ 10:05, that is clearly Chuck or Tbone, he is NOT a Bessie or Gertie! Love the doggies, Miss Martha sure makes a wonderful buddy to Sully. Keep up the great work! Thanks for sharing. BTW, the tomahawk steaks I get from Fred Meyers have been some of the best steaks I have ever had.. Your production looked great!
Dakota Lithium, 11 year warranty with built in BMS. They can also supply the other "Victron" equipment you WANT, in a package deal. Ships right out of Seattle.
thanks folks for another fun episode and happy birthday! my little dog Henry (aka the criminal) sends his best to your dogs. wishing you calm seas from east bay, traverse city. JDR
Thnx for another great video and letting us tag along.
Happy Birthday from Australia.
Love your style and attitude, please enjoy your lives together doing something together that you love while being obviously in love.
Love in a important thing when you own a big boat, maintenance cost and fuel.
Enjoy your personal view on these hideaway harbours I would never know about. Thank you for sharing your journey. Can't wait for your adventure to the south. Thank you again, be safe and careful. A wave from Texas.
As I watch this, my breakfast is steak sandwiches made from left over rib eye steak from last nights dinner. Shawn has the right idea in eating steak!
I love a man that can cook (good)! He is definitely a keeper 🤙🏻
Thank you for the insight to Mackaye Harbor. Have looked at the charts and read cruising guides. Haven't had time to visit.
Thank you for sharing
That steak reminded me of one that I cooked for Christmas dinner a few years ago. It was a 2" thick porterhouse done in an iron skillet on the stove and in the oven. It is definitely one that I will do again, and I have.
Hi from Australia!...You two have me researching Nordhavns! I am liking the new 41
When in Anacortes, you can order fuel from Reisner Distributor for truck delivery to the top of Cap Sante's commercial dock. It's usually the cheapest price in the Northwest.
What Eric does in B’ham w/ his N86 as Reisner is there too.
Thx, very good to know! We’ll be up that way in a couple of months just in time for a “top off!”
Tomahawks are the eye candy of steak. All show. Nothing beats a good rare filet mignon.
Been a while since I watched your vids. I always totally enjoy them. I like how you come across as real people on the vids; you do not come across as a know it all; in fact I feel like I am learning as you are learning; your love for each other and love for boating always comes out in your vids!! And of coarse the love for your dogs!!!
Those 68's have a wonderful kitchen :)
Yes they do!
excellent video nice tour of south lopez island nice steak
You two are amazing couple - beautiful boat and enjoy all your videos adventures projects - the steak had my mouth watering 😊 thanx from Bluegrass country - Kentucky
Another advantage of lithium batteries is weight savings compared to AGM.
Looked good to me. The bone in generally adds to the flavor. Cut most of the fat off before grilling and skip the bone. Less cost with arguably the same result. Always fun to watch your adventure. Thanks for sharing. My Sunday morning treat along with my first cup of coffee here in a rainy spring morning in Chicago.
love your videos
If you ever sell your boat the buyer is going to be one lucky SOB.
Great Video!!!
I think you nailed it. Nicely done.
Looks good!
This is a cut I haven’t seen in Canada….rib eye yes. Enjoyed the scenic vid!🇨🇦
Love the “view” of Fidalgo; been visiting there all my life 😊🐠.
Happy Birthday Shawn and the Steak looks GREAT. :-)
What a great journey through the eyes of Chef Shawn and his infamous Tomahawk steak! Too bad it wasn’t as tasty as hoped. You talk about The upcoming battery swap was scary from the monetary angle, but I guess it is the best option. Thank God Shawn is so talented when it comes to these big jobs. Elizabeth my dear, you are such a great First Mate!
Thank you guys for Lopez...
Another great video, loved it. Good luck with going Lithium, I do hope you show the project. Shaun your the man.
Yep coming soon!
That steak is goooood looking!
Happy birthday!!
The trick to doing a Tomahawk so that the neat melts in your mouth is to season/marinade overnight, sear all over to seal the joint then cook on a low light for maybe 1-2hours for medium/rare say 80/100, I love Tomahawk steaks with a baked potato and corn on the cob, yum.
Yup. I like to dry brine my big steaks overnight. The grill up super tender after that.
The trick to making a tomahawk is to just not waste your money. Buy a ribeye.
Do you guys ever go to Port Orchard, WA? There's a boat I'd like you to look for, but first I'm curious to see if you ever visit there?
Great video (again) greetings from Whidbey Island.
LOVE IT! You also might want to try Herbs de Provence seasoning! Its very good with a touch of Lavender
Love your channel, when are y’all going to make it to the Bahamas
We’ll probably be there in 2 years…got a lot of ground to cover from Alaska to Idaho to Mexico 👍
Happy Birthday Shawn. Steak looked good, sorry it did not meet your exspectations.
Nothing beats Beef Tips
Hi what boat grill are you using? Did it come with the angle iron type grate or did you make the grate?
2 things: It's Mc -KAY Harbor. Rhymes with 'today'. Nice job on preparing the mega-steak. I'm sure the puppies feel differently about a repeat attempt. Ok - one more thing: next time you're in or near Skyline Marina, you should check out the "Loop Road." It's about a mile from the marina in Washington Park. Just get to park and follow the signs. Many years ago you would see more deer than people, but it has become a hot walking spot for the locals. Beautiful views - the loop itself is over 2 miles, but you guys are good for it. Thanks for all the videos.
It’s dry so PNW 🥴♥️
Anacortes, Wa.
Great video good job on the tomahawk.
If you're ever in the great lakes, I'll make you the best steak you'll ever have.
Happy Birthday bro. Hello to you both.
If you haven't been to Aleck Bay or Hunter Bay, they are also nice. You can reach the same store with a little longer hike.
Lekker man lekker 🇿🇦
Happy birthday, Shawn! Bummer the steak did not live up to the hype... Stay safe Freedom crew!! 👍👍👊👊
For batteries think about Pylontech U3000C and Scotty of Safieri !! 48V volt system.
They went with Battle Born LiFePO4.
Glad _you_ said it. That steak looked like it was mostly fat with some meat sprinkled in. I like my steaks lean, which is usually why I buy tenderloins and sous vide/sear them. Thanks for the demo, it _did_ look good. And that wifi meat probe is interesting too.
Happy Birthday yum! Use the existing wires to pull through the new wiring?
Bessie is not a Bertha, but a Bertho...
To the selected Durness!!!!
I cook our's on my BBQ-do about 6 per year;here in Canada they run between $55-65 each
Hope you shared with the dogs.
Fire
Loved the Tomahawk! Meat is best and I cannot go without meat for more than one day! Well, I most likely can but won't like to!
That looked great!
С Днем Рождения!)
Happy belated birthday. I’m looking forward to seeing your lithium project.
If you dony want to mess with alternaters, you can use a dc to dc charge converter between your exsisting alternater and your new lithiums for alot cheeper than a new balmar.
Damn nice steak!!
When you move south, you know you will miss these cloudy, gray, cold days...not!
Shawn, i am a boat builder and i have constructed about 190 yachts in the 55-75’ range. Last year a client specified Li Ion batteries with a large inverter. All our yachts are built to ABYC as well as CE Category A. Installing LinIon safely is not an easy task and trying to ‘salvage’ existing battery cables/breakers is nearly impossible. The discharge rate and charge rate and voltage for charging is very different compared to AGM. First of all, the most dangerous part is the ‘run away’ effect of a Li Ion battery. Once it goes there is no stopping so it is essential you contain the ‘fire hazard’ of these batteries. A steel enclosed box, directly vented overboard is a must, also a thermo alarm is a must, with an audible alarm at the wheelhouse. Next is the system itself, Victron Energy has systems available from start to finish, including inverter, bms, cut off switches for battery and charge controllers called buck boost for the alternator outputs. Almost guaranteed you need larger battery cables with special breakers for each battery output. Think twice before you do this and also let your insurance know, they typically dont like it unless designed by a professional electrical engineer.
Lithium-Cobalt Oxide (LiCoO2), or lithium-iron-phosphate (LiFePO4) batteries? Those aren't the same chemistry. One is subject to thermal runaway, and one is not. The way you have this written up leads me to believe that you are confusing the two chemistries. At any rate, they already installed the LiFePo4 batteries a few weeks ago, so your concern is a bit late. 👍🏼
I do understand the difference between different Li Ion batteries and i much prefer LFP batteries as their design is safer. Having said that, Shawn mentioned Li Ion batteries to replace his aging AGM batteries, not knowing which ones he will choose. Better be safe than sorry and regardless, having an electrical engineer design the system with the proper BMS and automatic battery cut off switches is of the utmost importance as well as a fire proof enclosure to store the batteries. Safety should be your number one concern, especially when you are 30 miles off shore.
@@jandejong8209 LiFePO4 are a form of Lithium Ion batteries.
What special safety considerations would you need to consider switching to Lithium Iron Phosphate Batteries ?
Hopefully, the BMS has cut-offs for both excessive heat and cold (you just can't charge in either, the PNW isn't likely to hit either extreme often). They're actually much safer from a fire standpoint as they'll never off-gas hydrogen, like AGM (AKA Lead-Acid) can. They're really better in every way, especially weight to energy density, I wonder if Sean's going to add a lot of electrical storage capacity or save money (fewer batteries/reclaim space in the house battery locker)? One note: it's generally better if they don't get charged all the way to 100% often, nor drained to 0%, but 5-10% buffer is fine for seeing 10+ years of life, MUCH better than AGM's emergency-only below 50%. There's a great CZcams channel about all things battery (and solar)... czcams.com/users/WillProwse
Shawn, how thick is your anchor chain? It looked a bit too thin to me from the video, looked like 8mm?
Great marbling in that chunk of dead cow meat! 🤠
Hello from Montana!
Montana! We’re obsessed now that we’ve binge watched all of Yellowstone 😉
Thanks for the videos … there’s not too many powerboat channels one can follow. I’m curious if you’re all that satisfied with the Magma flopped stoppers. I’m seeing them for the first time on your recent video. Is one enough? I have a 55’ Hampton Pilot House and have my doubts that one would be adequate. Would two even be enough?
Yes we’re very happy with the larger one and only on one side works fine for where we cruise at the moment, but we’d likely need 2 in more turbulent anchorages on the coast or in the Bahamas.
Hi guys,
Just wondering if you still have your old inverter / charger and if you are selling it?
Thanks,
Dave
THAT BONE WOULD HAVE THE DOGS BUSY FOR A BIT THOUGH. SAW A CHRISTENSEN YACHT FOR 2.7 MIL IF YOU'RE LOOKING, MIGHT BE ABLE TO HANDLE 2 OR 3 TOMAHAWKS. THANKS FOR THE TAG A LONG THIS WEEK.
Good video 😀 you guys are having to much fun 😀 lithium batteries last about 3 thousand charges and some have warranty for 10 years
Nice
Do you happen to have a link for that thermometer?
Here you go!

As a cullinary guy I have 13 thoughts but I'm pretty sure you did well.
my be nice to be sailing with Fred Flintstone
Happy birthday!! Yes it looked pretty fatty in the wrong kind'a way. Hope the pups enjoyed a bit of it!
How many additional AGM batteries will you have to replace besides house and crank in order to keep all the same on Freedom?
LiFePO4 batteries are generally considered best for house banks, not starting/crank batteries. Starting batteries are what you want for thrusters.
my ex's name is Bertee, I feel bad for the cow
LTO ! very high cycle numbers
The dogs were cheated out of a great bone... the Dungeness under the boat were probably clambering claws up, "heyyy.... heyyy... what about us down here?!?"
That bone was bigger than the dogs.
at the 10:00 mark, were you waving to your next steak? LoL stay safe, Tim & Cat
We have a local steak cooking contest annually. We have never entered but think out steaks are probably better because we marinade them about 24 hours.
You went to Lopez and didn't have dinner at Haven?? Bucket list it.
With all due respect, you call that expensive, in New Zealand diesel is $9.00 a gallon and we have to pay a “road user tax” on top.
😳😳😳
Happy BD. Tomahawk steak, its a must try but not easy to get right. nice try tho.
I know that by now, you've already done the switch to lithium but I'm curious if you researched Firefly? I've been considering them and would like other's opinion.
regarding the tomahawk the question really is what you like about steaks.
If you like the meat taste itself a tomahawk is amazing but if you really like the roasted and seasoned taste on the outside you are better off with a ribeye as you get a more roasted surface with less meat.
MV Freedom crew, I noticed you tie bow lines to the anchor rode while at anchor. Can you explain? Thanks! Appreciate the show.
The bow lines are attached to the anchor rode to take the strain of the anchor. They ease the wear on the windless and let the bow cleats do the work
at anchor.
‘We’re going to need a bigger boat.’ Just to cook steaks. Nice.
I’m not a big fan of ribeye either. Try some nice gold label waygu NY Strips from Snake River Farms. Melt in your mouth good
Thats a Freekin Brontosaurus Chop, Wilma
Good marbling on that steak Shawn.
Did you know the best steak in the world comes from here in Australia ?
doneness?
I just worked out here in New Zealand if we bought Pirate Radio N86 it would cost NZ$59,607-00 to fill up :)
I have fished The Dalles of Oregon of the Columbia River been down the road to Astoria in a car I wish I could be there on my boat happy birthday
We’re heading up that river in a few months!
I watch every one of them that pop up I can't wait to see your head up that way have a safe travels
