I made this for dinner tonight, and *WOW!* Such flavor! And Mama Noi was right: "so tender!" I used the ketchup manis I made myself (because the commercial brands seem too over processed) and cut up a medium white onion and threw it into the pot along with everything else. And as a reflex, I added a few slivers of peeled ginger and a bay leaf. Served the chicken over fresh ramen noodles and some of that *amazing* broth. This is definitely a keeper!

Thank you for sharing! I love your videos. This also was one of my childhood favorites - my mom is Thai and my dad American. We called it "Soy Sauce Chicken" and my mom would also add a few hard boiled eggs into the broth. It was such a treat to eat the egg with the broth over a hot bowl of jasmine rice. Definitely comfort food for me.
As Marion said, the original Beggar's chicken is different~ It's originally a Chinese dish of chicken that is stuffed with rice, chestnuts,etc... wrapped in clay and lotus leaves and baked slowly using low heat! It's origins came from the fact that a beggar stole a chicken from a farm but had no utensils to cook it in and this was the method he devised to cook it! Just in case anyone was wondering. :D

Let me just say that I absolutely love your recipes. Made a few of them and all turned out delicious! I just finished with the beggar’s chicken and I must say that I love this dish so much! I was hesitant at first because I do not like coriander, but I’m glad that I went through with it because it turned out great!

I tried this (halved the sauce recipe) but with some pork belly and it smelled and looked absolutely beautiful!

The 3 infamous ingredients garlic, coriander root, and white peppercorns are called the 3 kings! It's so refreshing to see this used in your video!
Interesting, I've heard it called สามสหาย "sahm sahai" or สามเกฺลอ "sahm gleur"(3 friends) but never 3 kings before.

Made this tonight, it came out great. Couldn't find sweet soy sauce anywhere, so I used terriykai and cut it with soy sauce.... Probably not the best direct match but it shared some of the ingredients with the sweet soy sauce she was readily available. I couldn't get the skin to look like yours, it was pretty soft, but I noticed in the video it was cooked breast up (the whole time?) but the recipe says breast down and then flip - suggestion? Definitely will try to make this again (with the right ingredients).

I think it's nicer to thicken the sauce before u pour it. That's how I saw the Chinese chef did. I have tried too . It comes more shinny on the skin of the chicken . 👍👍

It surely look scrumptious. I’m going to try this recipe but wondering how many pound of a whole chicken you use for this recipe.
Mine was about 1.5kg :-) If yours is bigger or smaller you can adjust the cooking time :-) You want to cook it until you can see the leg meat is starting to pull away from the bone and the meat is very tender.

This is absolutely recommended. If by any chance the coriander root is not available, you can replace it with the coriander stem. And if dark soy sauce is not available you can use oyster sauce. 😉
My chicken turned out real beggar looking 🤣 I think it’s important to vary cooking time depending on the quality of the chicken. Anyways, thanks for the recipe :).

Cilantro = fresh coriander. Cilantro is the leaves of coriander plant

Herbs, esp cliantro, mint, parsley (except for woody herbs) do not do well in dried forms. The taste sort of change, but if you don't hv fresh ones, I guess it's still okay? `

Hi Marion! Love watching your videos. I have a question regarding coriander; I am part of a percentage of the population that tastes coriander as soapy. For me it's a really foul taste that I have tried my best to get used to and appreciate but couldn't. Since quite a few of your recipes call for coriander, do you have any substitute that you might recommend?
I have made this for family who are like you and hate coriander and they really liked it. I think because of the way it is cooked and the longer time cooking it doesn't have the same flavour as it would have if it was stir fried or fresh leaves? I often use Thai Basil in place of coriander too and it seems to work well even though it is a completely different flavour.

I know it’s a traditional Ingredient for this dish.. but I would really appreciate a substitute for coriander because I simply cannot stand the taste. I am so looking forward to making this!
