They are supposed to look well fed, they lived in a thriving community.
The criticism for their healthy look can come when the story progresses with time and nothing changes about them with all they have gone through.
Well, we can assume that a huge chunk of their food came from pre-apocalypse canned goods, which are very unhealthy and can easily make you fat.
That, combined with the fact that that fat guy is a kid, which probably made him avoid doing any hard work during the struggling stage of the outbreak, makes it quite easy for him to be fat
Okay the university massacre low key pissed me off because I forgot her name but the food wasn't gonna and yet didn't bother to teach them to be self sufficient like how to grow their food and shit and her idea was let's kill them off like it's their fault
