The Holy Spirit illuminates the truth. When you hear the truth or read it, the Holy Spirit gives you an Amen. There is an agreement with Gods word.

How do we know what promises are for us Christian verses what was just for the apostles?

Our Lord guids the church into all truth yes. The same church he sent the same way He was sent into this world. The same church he prayed would be One as He and the Father is One. Wonder what that church could be.

Daniel is referring to the modern (arising about the 1970s or 1980s) that the NT prophets are sometimes wrong in what they teach BUT that this does not apply to OT canonical prophets or NT apostles. The scholar Wayne Grudem is a champion of this idea. Your critique of it is right on. Simply put, both canonical and non-canonical prophets were inspired by God. And if God inspires a prophet to speak His word, then it is axiomatic that He can and will see to it that the prophet will accurately pass on His word. So Dr. Gruden's distinction between canonical and non-canonical prophets' inspiration makes no sense.

I think this does apply to all scripture and prophetic writing, you can't just trust anyone blindly because they said that God told them so. We should carefully measure every claim on its merit rather than blanket statement everything's true or everything's false. And it's not about man overpowering God, God chose to limit his power by giving us will free from his. And God doesn't stop us from confusing each other this is obvious just look around the world.
Also I think it's fallacious to say a can't be true because if a is true then b is true. Often when I hear this I just say a and b are true so what's the problem. I understand implications means you'll need to deconstruct your faulty beliefs and that's a lot of work but it's worth it to get closer to reality. I'm being critical from a place of Love though greg, you're one of my favorite apologists in the world. I would love to spend all day chatting with you.
