Pam's Broccoli Soup Concentrate
5-6 cups broccoli pieces
1 medium onion, chopped
1 carrot, chopped
2 cloves garlic, diced
Salt and pepper to taste
3 cups chicken broth
Saute vegetables in a little olive oil until tender--add small amounts of water as necessary to keep from burning. Add broth, salt and pepper and boil for about ten minutes until veggies are very soft. Allow to cool for a few minutes. Blend in small batches to the desired consistency and store in the refrigerator. When ready to serve, thin with milk, cream, or broth as desired.. Garnish with grated cheese and broccoli florets.

Dehydrate the stems, powder them, and then use the powder to make a single serving of shelf stable broccoli soup whenever you want it.
Just did a whole case of broccoli stems and leaves last week.
I was thinking something similar to that. But I was thinking freezing a bunch of Broccoli stems till we could triple or quadruple this recipe & then freeze dry it! Then it didn’t matter what time of year it was …Instant Broccoli Soup!
I was thinking the same thing. Or go ahead and make the soup and dehydrate that
Interesting. I use them by peeling them, & first day's use slicing to add to fried rice. Second day, I chop florets finely & add to avgolemono soup.
was thinking the same thing - dehydrate the soup. I have dehydrated the stems, turn in to powder then add to a "greens" jar. This mix of greens is added to dishes I cook up (soups, pancakes, smoothies, eggs, etc)
I roast the sliced stems with chunks of potato, butternut squash and cherry tomatoes. I use olive oil and 1package of Italian dressing mix before roasting. When it comes out I frequently add cooked bacon. Yum.
That sounds soon good! Yum.
That is something I will try.
Yummy, I’m going to try that! Thank you for the suggestion!
I need a snow day so I can curl up on the sofa, drink hot tea and jot down recipes LOL
I freeze dried broccoli stems then powdered for use in soups, green smoothies and dips. Also when I make Overnight Floret salad I cut in small pieces the broccoli head and stem as part of the salad. I use the cauliflower stems the same way, no waste at all. Part of my “ make our food stretch and save” project.
I cook the sliced up stems in olive oil, garlic and a couple if anchiovies and use it as a pasta sauce. Add grated cheese. Yum. Nothing goes to waste!
That sounds really yummy!
ARE YOU KIDDING ME? I just ate the most delicious broccoli soup in the entire world. Thank you, thank you, thank you. Carrots are in the dehydrator. Loaf of your bread coming out of the freezer. And people asked me if I’d be bored in retirement. And I only found you a couple weeks ago. LOL. My gal is so jelly she still has to work. Other than my prayer and scripture channels, your the best. Both of you. May God cause his grace to always shine upon you.
I ferment broccoli stems with a clove of garlic. They are so crunchy and delicious that way, and super healthy.
I have fermented so many other things. I have NO IDEA why I didn't think of Broccoli stems! Yum.... I'll have to try that...and of course add garlic! 😋 😋 😋
@@redeemedvintageseamstress4728 And don't forget to peel them. I think you'll love them!
Thank you, Pam. Great ideas, as always. I love these kind of videos. It sits in the back of my mind when I'm cooking. Retirement looks wonderful on you.
You can peel artichoke stems and cook them, they are every bit as delicious as the artichoke heart. My sister and I both waited for mom to give us the cabbage core. We loved them. And I still eat them to this day.
@Wayne - I like cabbage cores too, raw of course, but when I cook them I just add them to the rest of the cabbage.
I don't cook them
I always loved the cabbage stems too and still eat them at almost 70.
So good!
We love broccoli cheese soup, but we leave broccoli in small chunks.
I have an immersion blender I bet would help cream the soup a bit.
Thanks, Rose Red.
The spiralizer would be fun. We have its sister tool, the K.A. vegetables sheet tool. Makes great squash lasagna. I'll try it with a layer of broccoli 🥦 😋
This is a fantastic idea, Pam! I’d love to see more ideas. How about a “Scrumptious Scraps” cookbook? 😊 Many thank to both of you for all you do.
Looks delicious! I will definitely have to try that. I dice up broccoli stems similar to the size of diced celery and freeze them on a cookie sheet. I then store them in the freezer in freezer bags. I add them to vegetable soups and they cook up beautifully. I also do the same with my cauliflower stems.
I actually prefer the stem over the florets because they don't get soft as fast and I like a little bite to my broccoli ... This looks like it would be delishous ... Another recipe I need to try ... I love your rainbow lentil soup with just a few additional ingredients ... Thank you for all you two do for the community.
Me too. The stems are the best part.
Making broccoli, cauliflower, an carrot soup right this minute. Thanks for all your helpful ideas.🙏💖 from Arkansas
I think I’d even run the concentrate through the freeze dryer for camping soup.
This was a great idea, thank you!
OMG I'm so excited to try this recipe! I don't mind eating the stems... I steam or fry them, etc. But my husband doesn't and picks them out once he realizes I hid them in the dish 🤣. So this will give me a new opportunity to incorporate them into a new item. I will probably cut them up, and freeze them until I get enough to make this recipe.
That looks SO good! What a great idea! Thank you, Pam!!
I love this idea!!
Looks great !
Plan to try this!! thanks!
Wonderful!
Wow, this looks good!
I can't wait to try this tonight!❤️

What a great idea!! Thank you for sharing!
What a great idea! Thanks for sharing.
Thank you for sharing this. I love the idea of the concentrate to use in other recipes.
Looks delicious. I can't wait to make some.
Love your videos! Thank you for the recipe. I am going to do this from now on!
That was a excellent recipe Pam. Thank you for sharing your ideas with us! This I must try.
Happy New year Pam and Jim.
Thank you for doing this video. Blows my mind when people throw away the stems.
Soup looks great xxx
My favorite veggie. It looks wonderful and so easy.
The soup concentrate looks wonderful!
Thank you for sharing this great recipe
Wow. So goood. Thank you and be blessed
Love that pan. I have one and I never use it, now I need to get it out and use it more. Thanks for all the videos.
I love it thinly sliced and stir fried x
I made this along with you😆Thank you❤
I love your happy ways. The soup is a winner.
Pam you are the first person i started watching when i started learning to can a few months ago. I LOVE this recipe and plan to try it this weekend Thank you so much. I can't wait to try it.
I love broccoli soup. Do you think we could can this soup (without the milk, cream or cheese of course - add that later like the tomato bisque soup). I would love to have this canned on my shelves! Great video. Thanks for all you both do!
There is a heap of nutrition in your broccoli base. Great use for what I normally toss out. Thank you😊
Thank you, Mrs. Pam, for all your wisdom, knowledge and understanding. You are an awesome blessing to so many of us.
I've been putting my stems in the compost , thank you for showing us how to make a meal out of them .
I feed them to my dogs. Now I have a way to use them! Thanks Pam!
I steam the stems just a couple of minutes longer than the florets and they are perfect. I once heard Jacque Pepin say the stems are the best part.
Thanks so much for sharing this, I will never discard the stems again! I will definitely try this out 😊
I love the slaw in the summer.
Wow, this is awesome! We usually throw them away. I'll be making some, that's for sure!
Made this soup just the other day, fantastic, quick and easy! Thank you!!
Yum! I’ve only peeled and cut up the stems for stir fry or salads. This is even better!
What a great use of the stems! Sadly, I’m one of those people who rarely makes use of the stems, until now. Thank you for sharing and thanks to all the folks leaving ideas in the comments it’s wonderful to have these ideas.
This is wonderful!! I can see drying it and using it as an instant soup. I prefer the stems so I am sure I will love this!! Thank you so much for all this great information.
Yummy!
Your new haircut is lovely, too ♡
This is awesome!!! Thank you for sharing!! 🥰❤️🙏🏻🇨🇦 God bless.
That sounds so good for a winter supper.
Love the skillet, have it's sister!
I'm getting so many notifications I have been missing the most helpful and useful videos. Broccoli stem slaw is the greatest idea I've ever heard 😊
Unfortunately I need to take the time to clean up my notifications 🙂
I will listen to your other videos while doing chores 💚
Friends took us out to eat and I had a delicious tomato basil soup. I went home and googled recipes to make it from scratch. Oh so good! I've canned the base and heat and add cream to mine and hubby has his plain. Grilled cheese sandwich side a complete filling meal.
Love broccoli soup. Always save the stalks. Peel the tough ends to use in stir fries. Thanks Pam and Jim.
I’m currently grinding up broccoli and the stems for broccoli cheese soup. I have been planning all day to make soup so it’s kinda cool that we are both making our own variation of broccoli cheese soup.
I love the idea of making it a concentrate. Great idea. Thanks Pam ❄️🇨🇦❄️.
Thank you for sharing your recipe! I had no idea what to do with broccoli stems and now I do.
Thank you so much for making this video! I now have a new use for my broccoli stems. Growing up in a small coastal town, my Asian friends would trim off the rough edges of the broccoli stems and chop the stems up into small thin cubes to cook in their stir fried dishes. I never thought to use the stems to make soup. 🤯🙂❤
This is a great video!! I would use it in veggie broth!
Great recipe! This would be something I could prep ahead and have in fridge for weekend company. I always stress over the food! I don't want to spend all my time in the kitchen rather than with my guests and this will be just like fresh eating and EASY!
Excellent video and more ideas to try. Helpful comments too.
I really loved this idea. I never thought about using the other parts. I usually just toss into the compost pile. Thank you so much.
Great idea, I normally just toss them to my chickens. I imagine the mandolin would also be useful for the thin slices.
Wonderful, thank you! I'm going to make this today. Dirt cheap too.
I just stumbled onto this gal's content the other day. I love her... she's darling. Thank you for sharing all the wisdom you have gained over the years ❤ May you and yours be abundantly blessed
I never throw any of the broccoli away.. love it..
Great video thanks
I'm definitely making this soup! Thanks for sharing!
You are welcome.
So happy to see you enjoying your self with Jim, after your retirement, YAY 🤠
Usually I just peel and steam them and add to recipes like soup, casseroles or Stir frys. Learned a nice thing yesterday. When peeling potatoes use your paring knife and trim a little thickly. Then use then to fry or bake potato skins.
If you shred them there’s often no need to peel them. Saves a step!
I peel the outside of the stems with a peeler, then slice and sauté. So good! This soup looks good also.
happy thursday to you and JIM.. stay warm ...
Thanks for another useful video!! Now I have a great soup to use more 9f broccoli!!! Thanks again!!
love this. I would add a little butter to my cup f soup
Great idea!
Glad you think so! Jim
Same with cauliflower, potatoes so many things to make into a nice warm lunch or dinner. Tfs!
I’m turning 65 in August and in February it hit me the same way as you. I have lost 25 pounds since then. You can do it, not easy, but you can. Good luck I will be with you thru the journey.
I love Broccoli! But never thought of serving it like this. I never toss the stems I always just cup in coin sizes and served with the florets. But that looked great….I’ll try it!
Thank you Pam and Jim! Y'all are a great team. You have inspired me in so many ways. I canned more last fall than I have in years because of your wonderful videos. I share links to your videis with my sisters. We are all working together to improve our preparedness and food security. I find comfort and reassurance on your channel. Thanks again!
Great job! Jim
More, much more nutrition than the tops! Just yesterday I made a broccoli soup with the broccoli stems, celery, one carrot, garlic and onions and Bone broth, Puréed in my vita mix to a smooth texture. Delicious. Sometimes I add a little coconut milk for a creamer soup. I hope your enjoying you retirement.
Hello from Luxembourg,
I'll try this I love soups!
Martin👍
Hi Martin! Glad you are going to try it.
Some slices in a salad are nice for a bit of crunch. I also use them cold or hot pasta dishes, soups, casseroles.
I can almost smell those sizzling veggies! Sounds so yummy.
LOL! It was really good. Thanks.
Great idea. We love broccoli slaw. A bag of pre-shredded is quite pricy here.
You can also use the broccoli leaves to make the same soup.Lots of vitamins in it.Taste great❤
I love them.. they are sweet and crunchy.. or sweet and tender if cooked. ❤
Yes, they are.
Finally had time to watch this one. I saved it to try later. It was hilarious to read that Jim ate most of your lunch. But I’m glad he enjoyed it!
Yes he did enjoy it! Thanks for your comment.
Love the ideas will be using them 👌 I like most any kind of soup. God bless 🙏 you and yours
Thanks so much!
Oh yes! Your soup looks delicious ! I use a potato peeler after i cut the stems lengthwiseas best I can and what misses my mouth during the process goes into the pot with the tops. The peeled stems always taste better to me. ❤❤
Always good to hear encouragement not to waste a totally good part of a vegetable - especially since broccoli stems are made into the slaw with carrots and usually cabbage, and sold bagged in grocery stores. Broccoli stem spears (vs celery which I'm allergic to) are a favorite of mine plain or with a dip. I actually prefer the stems to the "flowerettes." I choose to peel the woodier part of the stem, if it's from a mature plant. The LEAVES are good as well. When living overseas, I would purchase a stalk with the larger head and small heads, along with the leaves. They can be cooked like other greens or used in a salad. The age of the plant, and how you cook them, will effect their 'sweetness' (lots of info online for such.). Thanks agin, RRH for basic info and food use that many may overlook out of habit.
It looks good enough to eat out of the pan. 😋
It was! LOL!
