I've coasted over time toward veganism (mostly because if I tried to kill a cow my heart would break, and the compartmentalisation of that broke down during all the wars we've been waging because in the 2002-2003 school year I knew someone who had come here from Nineveh as a refugee but still had family back home -- what do you say as this unbelievable, crazy thing is about to happen and you know the excuses are a farce but it's the people around you who will not listen to facts that break your head while knowing someone whose family is in danger from your country breaks your heart.... anyway that's then, but ever since that and what came after I've gotten unable to handle it -- everyone else do what you want, I wish our agriculture methods weren't throwing so much carbon into the air but the cost of freedom is eternal vigilance and that takes a little work and thought.. and big agra should have been prevented by a robust anti-takeover anti-trust and pro-small-real-work-enterprise attitude in this country and wasn't, but anyway) but I reember my first taste of this steak and how unlike any other meat I'd had it was, and I still know how delicious this cut is, and as long as I didn't think about the poor cow it would be sooooooooo.yummy. Other beef just doesn't have that flavor that feels like there's a point to eating it. Anyway, convoluted agreement from a near-vegan that this steak tastes so good my mouth is watering jut watching this and remembering it. I don't even think I could find a hanger steak in the sticks where I live now but I had it nearly every Friday night a friend's restaurant back in the city.
