Mastering the Art of Steak Cutting: A Step-by-Step Guide to cutting Beef Tenderloin (Filet Mignon)

  • I am asked often how to cook the perfect steak. I think the best first step to learning how to cook a steak is learning how to cut your own steaks.
    So, if you are looking to buy a whole beef tenderloin or pork tenderloin and find a deal on steaks by cutting them yourself, then this video is for you. The best deal you can find on steaks is learning how to cut your own steaks and buy larger cuts of meat. You can also save money by buying lesser grades of beef but I do not necessarily recommend that. I would stress to you the importance of learning how to cut your own steaks or butcher meat so you can save you lots of money and increase the level of food you prepare at home. When my budget does not allow for buying a whole beef tenderloin I opt for the less expensive, but very tasty, pork tenderloin. This video will show the techniques to butcher a pork tenderloin as well.
    Beef tenderloin is also called Filet Mignon and in this video I will show you how to trim a whole beef tenderloin into steaks or the infamous Filet Mignon. Filet Mignon is not just for fancy restaurants. We love teaching full tutorials and you will learn and have the confidence by the end of this video to run out to Sams Club, Fresh Market, Costco, or wherever you can find a whole beef tenderloin and bring it home to cut it into fabulous steaks. Once you steaks are cut you will find out how much money you saved and then be ready to sear your steak in a pan or grill your beef tenderloin (filet mignon) on the grill to perfection. We will have a few videos on that. We also have a few cooking classes that will share great steak recipes you can cook at home such as our Beef Wellington Class, The French Connection, and Black & Bleu class. These classes are listed on our website for an in-person visit and some are listed as an online course you can do from the comfort of your own home kitchen. Either way we are always here to help you learn to cook at home better and more tasty.

      Interesting. I have worked as a butcher at a 5 star restaurant and that's what we cut. Another place I worked and did a ton of the butchering for served 2 (4oz) cuts. No worries though, thanks for the comment and glad you watched the video.
