I remember that if you run a cut ring gasket that when it does fail or you need to remove the head that the head might be toast as it bites past the amount you can surface the head. Is that true to an extent?

The cut ring bites into the aluminum on the cylinder head. The cylinder head needs to be resurfaced anytime you replace the gasket due to the bite marks from the cut rings
