  • Smoked country sausages recipe is probably one of the simplest. Smoking sausages at home is not complicated at all. You just need to follow the rules and you will make the best smoked sausages you have ever eaten. Because the meat needs to be cured it is essential to use the right amount of curing salt.
    IMPORTANT: you always need to read the instructions on the package of the curing salt. The salt can contain different amounts of sodium nitrite.
    In my recipe, I'm using cured salt containing 0.6% sodium nitrite.
    you can also buy concentrated curing salt (I was using 6%) but then you need to mix it with sea salt to have 0.6% sodium nitrite in the curing salt
    ingredients for 1 kg of meat:
    17 g (0.6% sodium nitrite) curing salt
    2g ground black pepper
    4g ground yellow mustard seeds
    2g garlic powder
    50g water
