Sweet Potato "Taco" Filling Used 2 Ways: Bean & Cheese Burritos & Sweet Potato "Taco" Bowls

- The "taco" filling used in the two recipes featured in this video is a long-time favorite - it was passed along to me from a lifelong vegetarian friend of my aunt. About this time of year every year when the sweet potatoes start arriving, it's one of my favorite recipes to make. I think this is partly because it's the recipe that got me to like sweet potatoes - with lots of fresh lime, spices, herbs, sweet potatoes brighten right up and don't taste, well, too sweet!
In the video, I use the filling to make burritos as well as "bowls". But you can use it in quesadillas or tacos of all kinds - it's delicious in breakfast tacos.

Ooooh - I'd in some canned green chili's, maybe mash the beans into the sweet potato mix. Looks so yummy.
Looking great and healthy Ali and I bet it tasted great too. I could smell the browning of the onions which is probably my favorite part of any cooking. Might want add some shallots with the unions as that could enhance the taste even more so.
