Gordon Ramsay is hard on restaurants for using crappy, non-fresh ingredients. But he has no problem (and even has it in some of his cooking videos) to use packaged or canned foods when home cooking.
It’s $7 for 6oz of king oyster mushrooms and $20 for 1 lb of frozen sea scallops. That’s $1.17 usd per oz for the mushrooms and $1.25 usd per oz for the scallops. Depending on the cut of beef, you can get a good 6 oz fillet/steak for around the same price per pound as you would pay for smoked sausage. The only reason I’m even typing this comment is because I used to make a cheap and bougie version of beef Wellington when my husband and I were in our 20’s and making individual wellingtons with a cheaper cut of beef is so good that I just kept making them that way. So, for ppl who don’t eat pork or would prefer a more traditional and inexpensive Wellington it’s entirely possible even with the price of food in 2024 to make within your budget…all while still having the beef in your Wellington. Also, scallops aren’t out of the realm of possibility as they’re only .05¢ more per oz. than king oyster mushrooms.

It’s very easy to learn. I recommend starting with boletes if you’re in for the food and working your way up. The trick? Edible Boletes have yellow pores. Poisonous ones have red. It takes practice, but many edible ones are easy to tell apart from their lookalikes. I highly recommend it as a hobby!

Buy peanut butter (350g) for 2.20$. You will have effectively an entire food budget spent of 3.5$. It got everything you need. Plenty of protein. Carbs. Fats. Fiber. Drink water. Or buy lemons for 1-2$ and use a half lemon for 500-1000ml. Done.

There are far better ways to achieve the same thing on a budget, like adding coloured peppers to a salad for colour, or using cheap dried spices to add flavour to a pasta sauce. My family has been eating on budget since before I was born, and have even relied on food donations and homeless shelters when I was younger. (My mom couldn't really work to earn money with my abusive father in the picture) To give an idea how bad it was, I was wearing shorts from when I was six or younger until I was like 14. They left permanent indents on my hips (between the bone part that sticks up and the hip joints themselves), which have caused issues with my circulation. While I don't know how to cook (being aut makes learning that really difficult) I learned a lot of tricks my mom uses, including how to turn multiple nights' leftovers into a well-edible soup. She once turned taco beef and a few other things into a pretty good soup/stew. Hard to remember all the details for that one since it was like half a year ago, but yeah. She's been doing this my whole life, and it's not as hard as it seems. (the salvaging of food, I mean) Usually, you only have to add stuff here and there, like some celery or peppers, or salt and spices, depending on the dish.
