Marinade:
- 1 tbsp coriander seeds
- 1 grated garlics
- grated zest of 1 lemon
- 2 tbsp smoked paprika
- 2 pinches chilli flakes
- 1 tbsp dry thyme
Crush til finely ground
- add salt and pepper
- 60ml olive oil
- juice from half a lemon
Stir til combined
Prep chicken (he uses 3 boneless chicken thighs, doesn’t dry as easily as breast)
- Cut into thin strips
- Transfer to bowl and add marinade and mix well
- Can refrigerate up to 2 days; longer you marinade better it is
- Add chicken to pan and let it brown; don’t crowd pan
- When ready, add 1 tbsp lemon juice and stir

Made this Saturday, it was absolutely delicious, the week before I made souvlaki ( your recipe of course) that was amazing too. This food looked so delicious, I had to go out to buy a few ingredients and get cracking straight away.
It only took three hours to shop, chop, cook, serve and eat: Chicken gyros (I know, it only marinated for an hour and a half), Greek flatbread, tzaziki and a Greek salad. Absolutely bloody delicious - even if I do say so myself - but so did everyone. And it was so cheap to make. Perfect! x

I followed all your instructions except that I have only marinated for one hour instead of 2 days for testing. I also cooked it by little batches and cleaned the pan before adding some more. The result was absolutely amazing. I also did the tzatziki sauce. My wife and I love it. I will do it again. 👍👍 Thanks so much
