INGREDIENTS:
For the Chicken Souvlaki:
▪2 pounds of boneless, skinless chicken thighs
▪125g (1/2c) olive oil
▪15g (1T) salt
▪30g (5-6 cloves) minced garlic
▪5g (3 tsp) dried oregano
▪5g (1 3/4t) black pepper
▪100g (1/3c) Dijon mustard (preferably Maille or Grey Poupon)
▪Zest of 2 lemons
▪Juice of 1 lemon (approx. 30g or 2T)
▪Skewers (for grilling)
For the Pita Bread:
▪350g (3c) all-purpose flour
▪7g (2t) instant yeast
▪5g (1t) salt
▪8g (2t) sugar
▪15g (1T) olive oil
▪210g (3/4 cup) flavorful yeasty beer, warmed to 86-90°F (30C)
For the Tzatziki Sauce:
▪160g (1 large) english cucumber, grated
▪200g (3/4c) plain Greek yogurt
▪75g (1/3c) mayonnaise
▪1 clove garlic, minced
▪5g (1t) salt
▪5g (2T) chopped fresh dill
▪15-20g lemon juice (approx ½ Lemon)
For the Tomato-Onion Relish:
▪120g (2 medium) tomatoes, diced
▪60g (½) red onion, finely diced
▪20g (1/3 cup) chopped parsley
INSTRUCTIONS
1. If using wood skewers, soak for a few hours before grilling.
2. Cut the chicken thighs into roughly 1-inch pieces.
3. To the chicken, add olive oil, salt, garlic, oregano, black pepper, Dijon, lemon zest and juice. Mix well & refrigerate to marinate for at least 30 minutes, up to 24 hours.
4. Make the Pita Dough while chicken marinates. In a food processor, combine flour, yeast, salt, sugar, and olive oil. Pulse 5 times to mix. With the processor running, slowly add the warmed beer until the dough forms. It will be shaggy.
5. Turn the dough out onto a lightly floured surface and knead for about 2 minutes, until it becomes slightly elastic.
6. Cut the dough into 4 equal pieces (about 150g each). Shape each into a ball, cover with a damp paper towel, and let rest at room temp for 15 minutes.
7. To prepare the Tzatziki Sauce, grate the cucumber and squeeze out excess water. In a mixing bowl, combine the grated cucumber, yogurt, mayo, garlic, salt, dill, and lemon juice. Stir until well mixed.
8. Roll Out the Pita Dough: Lightly flour a surface and roll out each ball of dough to about 8”/20cm in diameter.
9 Grill the Pita and Chicken: Preheat the grill to 550°F/285C. Skewer the marinated chicken and grill alongside the pita bread. Grill pitas for about 2 minutes per side. Grill chicken skewers for about 12-15 minutes, turning occasionally until well charred on all sides.
10. Assemble the Souvlaki Wrap: Remove chicken from skewers and chop into smaller pieces. Place chicken in a pita, top with tzatziki sauce, tomato-onion relish, and pepperoncini.

As a half Greek, I'm confused by the addition of beer into the pita mix. As a half German, I'm confused about my Greek side.
I think since its a fast dough recipe, the beer is to account for the yeasty flavor it is not getting since it doesn't have a fermentation period.
But if there is no fermentation period, than why bother adding the yeast anyway?
@@hansvanlennep6376 So the dough rises when cooked, if there's no yeast the pita would be significantly less fluffy and soft. You'd end up with a pita that's more like a flour tortilla than a pita.
@@hansvanlennep6376 You could use something like baking soda instead of yeast, but yeah like the other commenter said, you'd be making tortillas instead of a pita like bread.
😂😂😂 Good one!
Protip about the tzatziki sauce: Even after you've squeezed dry your cucumbers, spread them out on a plate as thin as you possibly can and salt them. Let the salt continue to draw out the moisture for about 20-30 minutes, then towel off the salt and osmosed water. You'll know you've done it right when the cucumber turns a super bright green color. I learned this tip from Chef John and the completed sauce is always so much better.
Replying so I can find this later. Chef John is the GOAT.
Or just scoop out like 50% of the seeds before grating the cucumber
But please don‘t put Mayo in your Tzaziki 😅
@@phil__nbg Why not?
@@brendandever8532 in Tzaziki only goes in cucumber yoghurt some spice‘s and garlic, thats all 🤝🏽 if you have the right Greek yoghurt, you doesn‘t need mayo at all
Bri it should be illegal for you to post two bangers back to back 🙏🏻🙏🏻🙏🏻
No thanks!
bro fr hes gonna run outta recipes (he won't)
Um, the word "Bangers" triggers me and causes me to want more mashed potatoes......
@@systemsbroken brits be like
I get the addition of mayo to the tzatziki in your case, just noting that here in Greece you can get very low moisture yogurt that I think isn't as widely available elsewhere. That's what most people use and the result seriously thick, no mayo needed. For fattines, high fat yogurt + olive oil do the trick.
Since you’re in Greece, how do you make tzatziki? What ingredients are key? Thanks!
Simplest tzatziki is yoghurt, cucumbers, and garlic. A lot of people add dill which I like and one of my aunts put fresh mint which was okay but dill is better. But tzatziki is one of those things in Greece that every household is gonna do a little different
@@steliosmaris Does anyone add feta or is that just an American riff on tzatziki?
@@paid22b I’ve never seen tzatziki with feta, but hey if that’s what you want try it out bud. Don’t let these purists make you not want to try something potentially delicious.
The Dough Boy sound effect when you poked the dough lol 😂
My childhood. Sigh.
scrolled down to the comments to see if someone else brought it up haha
The foley on this channel is one of the things that really sets it apart.
Please bring back the funky dance at the very end. It was your trademark after all 😎🎶
One tip I got from Americas Test Kitchen. Make some extra marinade (that doesn't touch raw chicken). Then toss the chicken in it AFTER you grill it. The post-cook marinade actually penetrates the meat much more than pre-cook. It really amps up the flavor.
My wife (who is Greek) gets a bowl and puts in lemon juice, olive oil and some oregano. After grilling, remove the meat from the sticks and toss the meat in it. Really amps up the flavour.
I do the same thing, it is known as a hot marinade in our kitchen. nothing better than chicken wings cooked to half way on the gas grill then tossed in a bowl hot with Franks and butter, then back onto the grill to "set" the sauce.
Definitely love the ATK hack, the flavour it brings is amazing. Well said.
@@TheMalMeninga I knew a Greek guy once who would baste his steaks with a half a lemon stuck on a fork and dipped in olive oil, lemon juice, and good quality dried oregano... I do it to this day, it's amazing.
@@morganchilds9054 yep, I've seen that done also!
Toss in a few french fries and it becomes god-tier food status. Thanks for the video Bri!
I usually do pita chips and hummus, but fries also rock as a side. 🤘🤘
@@groom_of_the_stool1 no, not as a side. A handful of chips in the pita. Add some sriracha style hot sauce as well. But really, this sort of pita and meat wrap is great for taking on your leftover vege drawer and condiments.
YES!!! This was my experience in Crete!!!!
nope not traditional...lol
not sure why people started putting fries in their gyros
The Pillsbury Doughboy "woohoo" was a nice touch.
I made this tonight, and all I can say is "Let's eat this thing!" So much flavor in the chicken, and the tzatziki sauce is THE BOMB!! My hubby, who NEVER eats dark meat, took a bite of mine and said he's absolutely changed his mind about it! He then asked for his own! Brian, thanks for sharing your recipes! 😋
As a Greek person, I approve of this souvlaki.
👊🏻👊🏻👊🏻
Mayo in tzitziki is not canon but its definitely interesting and flavorful. You use a more fatty greek yogurt in stead.
LOVE this. I really appreciate that all of these ingredients are part of a normal kitchen pantry/shop so you don't have to go out and buy new ingredients to use only once or twice. Would love even more Mediterranean and/or Middle Eastern food on the channel.
Protip if you place your yogurt over a small colander with a coffee filter and leave it a for a few hours you get a really creamy yogurt thats not watery. Try making tzatziki with it (and using EVOO instead of mayo), it's great.
I'd love to see more Mediterranean sandwiches on this channel ❤
Absolutely. My family loves this style of food and my 6 year old will gobble it up. Brian has several Med dishes on the channel that have helped out and I'd love to see more.
disliked, "when the sun hits" wasnt playing in the background on repeat for the whole video

Woah. Never expected to see this kind if comment on Brian's channel. GET INNNN! 💪
Souvlaki Space Station seeing a resurgence!
Such good music
I've been working on my chicken souvlaki/chicken gyro for the last few weeks, so this came at the perfect time!
Done this today. Probably the best thing I’ve eaten from this channel and I cooked about 70% of things you shown. Thank you sir!
With all the "I tried the worlds (insert clickbait title here)" videos, its nice to find these that get down to details and inform you on what to do and why to do it. Such a refreshing channel.
These grilling videos are killing me. I can't grill in my apartment, and I know I could just throw it in my oven or air fryer, but these grill vids make me miss and crave BBQ soooooooo much. 😭
Even if your complex has grills it’s still a pain.
For real. Maybe the broiler could be used as a replacement? That makes me nervous tho, idk why.
Same here
I just fried the chicken on my pan
7:37 For gas grills I find it easiest to just turn the burners off after the grill is preheated, spray the oil, then reignite the flame. 🤙
but it's so much more exciting when the little red button for the spray can flies off like at 7:36 - 7:37 while wildly shaking your hand from the heat and fire ;)
Excellent as usual. I make these once a week for my family, except I cheat. Trader Joe's Middle Eastern flatbreads and TJ's tzaziki, though I also make homemade hummus (1 can garbanzo beans, half drained; 3 cloves of garlic; 2 big tablespoons of tahini (also TJ's); zest and juice of a lemon; S and P; olive oil in food processor to preferred texture, as well as maybe cilantro, or parsley, or whatever flavor agent like sun dried tomaotoes, to die for).
All these recent videos equal THE tastiest summer ever! Thanks B-man and Lorn!! 👏😁
I’m Greek and I definitely approve this chicken souvlaki pita. It looks delicious 😋
For sure , but if you have good quality yogurt , you don't need the mayo for the tzatziki. Everything else look super delicious!
@@teobot2 +1 for that
I love souvlaki. It's one of the best things ever.
I made the chicken souvlaki and the Tzatziki sauce. They were the hit at our Father's Day cookout. My hubby begged me to make it again. Thanks for great recipes.
Brian is Just the BEST!! Nuff said!! Seriously he makes Some of the best Recipes for us home cooks to follow! I have Tried many of his recipes and all of them were AMAZING! Thanks Brian you rock!
Cannot wait to make this for my next saturday pool day with my friends. It's a perfect light lunch/snack for my crowd. Awesome recipe as always.
The thumbnail made my mouth water. After watching, I MUST MAKE THIS.
Thanks for making a pita on the bbq look so easy. And, I really appreciate all your tips on the beer, the mayo and remembering not to salt the tomatoes and onions for the relish. This will make me look like a real pro on Father's Day.
Laughed so hard I scared my cat when you made Tzatziki in a ninja creamy jug
Thank you for posting this days after I had my first Souvlaki at the local Greek festival
This was our Father’s Day meal and WOW! Everything was delicious! Thanks Bri!
Cooked this last night. I've been sick so I didn't do the skewers and just grilled the thighs. I needed to treat myself to something amazing and had all the ingredients for the marinade and tzatziki. Wonderful flavor and amazing meal. Thanks for meeting the Mediterranean demand!
Thank you for the amazing recipe! Just finished making it and using it as a recipe to teach my son how to grill and how to make an easy meal on his own! So good! Everyone loved it! Thank you again!
Nice! Thanks very much for trying
Yes please nothing like Greek souvlaki 🇬🇷 ❤

Just made this for my brothers birthday, everyone loved it thanks Bri!
This exact dish has been in the back of my mind to look up & make; looks absolutely bomb and your timing is impeccable!
I've been looking for a good Greek Pita recipe! I'd love to see you do the longer version and infact see any other flatbread recipes you have!
just made this - WOW. Everything was absolute perfection !
Great recipe and can't wait to try that pita! Always wanted to make it from scratch.
The one thing you're missing is the french fries inside the pita! Makes the whole thing more authentic and even better
😎
Just made these tonight, huge hit. Thank you Bri!
ok, we did this dinner night before last...... and it was AWESOME! made the flatbread..... made everything..... the fam is still talking about it!
One of my favorites! Thanks Brian!
This was a terrific recipe! I had thought the Dijon was a bit much, but it worked beautifully. Thank you!
The exact type of recipe ive been looking for. You can always read my mind.
Hoping I will remember to make this when my exams are over, these look like they are my type of a treat.
Thanks for tonight's dinner inspiration, Chef Bri!
I just made these the LONG way a few weeks ago. this looks amazing and so much faster. thanks!
Making the bread is so going to up my souvlaki game!
Your recipe and finished product look great. Can't wait to try it.
Absolutely making this! ❤
this recipe is going to change my life
This looks soo good. I have to try this!
The more typical filming for Weeknighting makes sense, but very glad to see you're keeping your distinct look and voice for your main dishes. End results look incredibly delicious, and even kinda deluxe in the foil.
As a Greek this looks fantastic! Very smart to do the tomato and red onion that way.
Damn, that looks good! Must try soon. Bri, you gotta bring back the slo-mo dancing at the end. It was your signature!
Just made this. It was DELICIOUS!
I only have an indoor grill but will definitely try this recipe. I’m a fan of your recipes and channel.
Omgosh-yum. Can’t wait to try making the pita. 😮
Thank you for your lovely compliment. I hope my recipe was able to help you in your cooking.
Lauren and I were just talking about Olgas...This reminds me of there. Don't think they had Olgas in the Chicago area, but we loved it.
Dude covered everything. Excellent instruction. Good cadence. Super informative. Just long enough. Subscribed.
nice. just made it an hour ago. wife is on no carb diet so skipped the pita, though I made myself some small lemon potatos. Love the tsasiki, and the zest really amped up the chicken. 6 bucks all in dinner for 2, incl wine. thanks!
Been making homemade Tzatziki for years from a recipe I got from a friend who lived in Greece. Their recipe used a bit of olive oil and a pinch of fresh mint.
Never considered putting mayo in it but I may have to give that a try.
Made this tonight....Top Notch recipe as it was just outstanding. Didn't do the pepperoncini , but will next time. Thank you!
Excellent back to back video Bri! Wasn't expecting that!
Greek here with a couple of tips to really level it up:
- Tzatziki: Before grating the cucumber cut it lengthwise and scoop the middle leaving only the crunchy part. Hit it with a pinch of salt and a splash of red wine vinegar. After 10 minutes firmly squeeze out the juices. Less effort and better, less watery result. The small addition of mayo, a sacrilege for the purists, is essential to elevate the creaminess and fattiness of the sauce. If you have access though to the real deal (real Greek yogurts in Greece or exported to EU have 10% of fat) you don't really need the mayo. Unless you want a rounder, less harsh sauce.
- Pita: Follow the proofing of your other killer recipe of the 1-hour pizza -a Friday staple here at home- and after rolling them pitas take a long wooden spoon and press lightly the dough with the stem forming a plaid pattern. Spray with water and hit the grill. This will guarantee a much better cooking of the pita and make it to fold better.
Definitely doing this one. STCG had a Greek gyro couple years back that I've made ever since but this one I'm suspecting might just top that as my go to for Greek chicken. So stoked bri-man
This will be on my grill within two weeks. You rock Bri!
I saw someone use a potato ricer to get moisture out of foods such as cucumber, totally recommend it!
I salt them, wait 30 minutes, THEN ricer.
Wow this looks FANTASTIC 🔥
Just made this for the fam on the weekend and it was a hit. Cooked the pita and the chicken in my Ooni for some nice char
Hey Bri - …
You’re a great cook 🤤
Re video content style - this one is spot on perfect for me! Thank you 🎉
Thank you, Brian. 🙂
Oh wow.. second vid this week that I can't wait to try!
I'm definitely going to make this
Man that looks good.. definitely wanting to try your pita technique to make them quicker
Nice work on the pitas. For the tzatziki - I like to slice my cucumbers lengthwise and salt them to extract a lot of the water beforehand and then do them as a fine mince (not a big fan of big cucumber chunks). Mayo in tzatziki is akin to blasphemy lol - try olive oil in place of that. Good marinate for the chicken - I've never tried dijon before, I may try that. I do like using a bit of greek yogurt to marinate chicken - it helps tenderize it in the same way that buttermilk does and it sticks to the chicken pretty well and helps additional spices and herbs to adhere - I'd have probably added oregano to the marinate, but still - solid.
That looks amazingly delicious ❤❤❤
Looks amazing, making this soon!
BRIAN... another culinary F-Bomb!!!! loved this recipe
holy shit that beer hack is genius
Made this tonight, was effimg delicous. The fresh pita bread , man its gonna be hard going back to store bought.

Feedback Brian-it was AWESOME!!!!!! A family favorite for sure. The relish, the Tzatziki and the pita with chicken and standalone hits and easy!!!
That looks amazing.
I don't have a grill in my apartment so i just broil the chicken in the oven. Always comes out perfect.
Man that looks amazing.
Now I'm hungry - thanks Bri!
