How To Make Smoked Pig Shots!

- Is it a fad, or is it a delicacy? Smoked Pig Shots are the latest and greatest craze in backyard BBQ. Let's make some, and see if they are worth the hype! Time to fire up the smoker and get this video underway!

For these bbq pig shots, you'll only need a few things: Thick bacon, sausage or kielbasa, cream cheese, shredded cheese, jalapeno, toothpicks, gallon ziplock bag, and a good BBQ rub. In this case I used the Guga Foods All-Purpose BBQ Rub.
Cut 1/2 inch slices of kielbasa, then slice your pack of bacon in half. Wrap the bacon around the kielbasa and pin it in place with a toothpick. This should resemble a shot glass (except made of meat). Now mix room temperature cream cheese, jalapeno, cheese, and bbq rub in a mixing bowl and mix thoroughly. Place the mixture in the corner of a ziplock bag and cut a small section of the corner off.... essentially we just made a hillbilly piping bag. Now pipe the cream cheese mixture into the shot glasses. Sprinkle some bbq rub on top for color and into the smoker at 275F for about an hour... or when the bacon is got a nice texture (just about crispy or a few minutes before).

If you're struggling with your bacon, just wrap it around more than once. Works for me. Also, came back to add (experience today) the BIGGEST help is leaving the sausage on the cutting board and wrapping the bacon around while it is flat to that surface. Don't pick the sausage up and try to wrap. I used regular every day bacon and it wasn't difficult at all this way. Hard to explain what I mean, sorry, but check out Hey Grill Hey pineapple pig shots and that's how she does it. Will for sure save you some aggravation, as I discovered making about 50 of these today. Thanks for the vid and recipe!

Been following your recipe for over a year now on my camp chef smokepro...as far as bacon, I've found that the Kirkland thick cut hickory smoked bacon works perfectly. A trip to Costco is all it takes. Keep up the great work.

@@AndersonsSmokeShow use hot sauce as a binder and put Fajita seasoning on it. Smoke it til about 170 and then put it in a aluminum pan. Put some chicken stock in pan, put more hot sauce on it and Fajita seasoning too. Put some butter on it cover it and cook til about 205. It's good change of pace

I made a tool for making pig shots, inch & a half p.v.c. Pipe cut in half, hot glue the 2 pcs back to back. It makes a stand & cradle to hold bacon & sausage

I go to Sam's for Wright Thick Cut applewood smoked bacon. Thickest I've ever found. I want to know where you got that Ohio shaped cutting board.
I’ve used that before and you’re right, it’s better quality for sure. My wife got that for me a couple years ago from a craft show

Next time try putting the pieces in the freezer for a short time. It will stiffen up the bacon
