Delicious Keto Chocolate Butter Cups Recipe

  • This recipe was inspired by my love of all things good fats and the joy of indulging in a ‘treat’. While I have always had a sweet tooth, I’ve been able to indulge carefully by choosing higher quality ingredients and most importantly, by looking to the science behind what sugar and bad fats do to our health. This has allowed me to quiet my cravings - the best outcome of all! My trick is to eat more good fats. The good fats satisfy your body’s deepest nutritional needs, leaving little room (or appetite) for junky candy. So when it came time to have children of my own, it was important to me to provide them the same right to balanced health, and a normal relationship with food.
    You can substitute any high-quality nut butter you like however, my biggest concerns with peanut butter are aflatoxins from mold and rancidity of the oils.
    So, one way I’ve upgraded my diet has been replacing peanuts with other nuts (macadamia, cashew, pili nuts). I love cacao because it is an amazing source of polyphenols; however, most commercial peanut butter cups and other chocolate candies are made with low-quality chocolate and a lot of sugar, so it can negate the goodness of the cacao. Don’t let the three step hardening process of the ingredients fool you; this is an easy recipe and one you will want to hang on to not just when you want to treat yourself, but anytime you want.
    No excuses, no guilt. Just delicious-healthy. ;)

    Ingredients:
    Makes 12 servings
    * 1 ½ cups dark chocolate chips (For a keto version, use 100% chocolate)
    * ¾ cup nut butter of your choice
    * ¼ cup coconut oil, melted
    * Pinch of sea salt
    * Pinch of monk fruit (optional)
    * ¼ teaspoon real vanilla powder
    Instructions:
    1. Line muffin tin with 12 parchment paper or silicone muffin liners and set aside.
    2. Melt chocolate chips in a double boiler.
    3. Spoon a generous tablespoon of the melted chocolate into the bottom of each muffin liner. Spread evenly and freeze for 30 minutes.
    4. Put nut butter, melted coconut oil, sea salt, monk fruit and vanilla in a food processor and process until smooth.
    5. Remove the muffin tin from freezer when the chocolate has hardened. Spoon 1 tablespoon of the nut butter mixture into the center of each chocolate cup. Return to freezer for 20 minutes.
    6. Remove the muffin tin from freezer when ingredients have hardened. Heat the remaining chocolate in the double boiler again and spoon over the nut butter mixture. Return to freezer for 30 minutes.
    7. When the final layer has hardened, remove from freezer. Store leftovers in a covered glass container in the fridge.

    Carb: 4 g

    I make these, well my own version but I use Lily’s chocolate chips and then add my coconut oil and salt and vanilla, also I use the back of my spoon and push the chocolate up the sides of the cup so the peanut butter is encased in the chocolate , I also add sweetness to my sea salt peanut butter and sesame seeds. So good , I just eat one a day but when I’m down sometimes it’s too. You are right they are a life saver.Sometimes I just make my own chocolate with cocoa butter and cocoa and salt

    are yo adding any type of sweetener in this recipe, can I add stivia for example to the dark chocolate? or no need it will test good without it

    I LOVE chocolate and I buy the pure cacao powder but I'm not SURE my new fav brand is tested for molds. Previously I was getting the cacao powder from Bulletproof brand, but the price for theirs, which IS tested for molds, has recently skyrocketed WAY out of my reach. DO YOU HAVE A BRAND OF CACAO POWDER OR PURE BARS OR NIBS, ETC. TO SUGGEST THAT DOES TEST FOR MOLDS?/MYCOTOXINS? I hope so!! Thanks.

    Does keto chocolate have a fake sugar in it? Where do you find 100% chocolate without sugar? (what are the other ingredients in it?)
    And, does monk fruit change your gut bacteria?

    I ordered your book (but it's not here yet) and am new to Keto. I have a great need for healing from chronic illness and am willing to do whatever it takes, but there are so many different viewpoints and I still dont know REALLY what to eat! ie. I take NO over the counter or pharma drugs and no other drugs or alcohol. Compared to most Americans I eat RIGHT but I know my gut is not healed yet and have had chronic inflammatory response and now found out I have cardiovascular disease too. There are other "experts" who are talking about lectins and mold toxins with nuts and seeds and so on, and so now I don't know if i can safely eat any nuts or nut or seed butters that you mentioned in this recipe. Some even say cacao is not good due to high lectin although I love pure cacao powder and usually get it from Bulletproof which is tested for mold, but what about the lectin part? AHHHH! Any advice? thank you.

      @@naomiwhittel Well I would love to find a FUNCTIONAL practitioner near me but I have been ill for 35 years and now I exist doing almost everything for and by myself. Unless a miracle happens I will not be able to pay for that kind of help. Hence, my trying to get info from her book, etc. It's a shame that the ones who need help the most are usually the same ones who cannot pay the price for REAL health care, or online courses and programs. I'm just doing my best. Anyway, thanks for the reply.

    Great video but I’m confused how monk fruit could be optional if you make with 100% cacao? Nobody especially kids would like that...

    you didnt say what nut butter! is it peanut butter?

      Hi Robyn! We love macadamia nut butter for this recipe. As for peanut butter...peanuts can contain aflatoxins from mold, especially if the peanuts are grown or stored in a humid environment. And although Naomi doesn't recommend consuming peanuts every day, she does include it in rotation in her High Fiber Keto plan because of the benefits they offer - so in this recipe peanut butter could be terrific! You can look for peanuts/peanut butter that comes from an arid region (like Arizona) or please feel free to substitute the peanuts for almonds or macadamia nuts instead. ~ Naomi's Coaching Team
