Mmmm, I sure do miss the days when my buddies and I would go to Lake of the Woods fishing. There's nothing like finding a small island and cooking some freshly caught Walleye in the pan. Throw a few cans of beans on the fire and another pan with some fried potatoes with onions mixed in. OMFG was that ever the best! of course these look pretty good too, they make my mouth water. LOL.
Lake of the Woods, one of the most beautiful places on earth and where I spent many summer days of my youth. Best recipes come from the place where the fish is caught fresh out of the water.

We eat a lot of walleye in Northern NY in the 1000 Islands (near Lake Ontario). Our legions have it w yellow perch (also excellent).

So what kind of breading/crumbs were used on second method?
I have no affiliation with this company but you must try the "Weisenberger" batter dry or wet it's great. Kind of hard to find but worth the effort. I will try your mix. Love to fish and eat fish!!!

I got my Walleye Charlie Barens method. Got em in an end freezer at Menards. Now I'm going to broil em like you suggested.

I never understood why they always have to put a piece of lettuce under the fish. If I want a sald I'll make one, instead of a hot piece of soggy lettuce. Geez.
I think it's pretty obvious. It holds the juice in place, it's not for eating😅

sorry, i , we, have been eating walleyes for over 50 years and NEVER had any one find those bones , ever if you do, give them mashed spuds! lol, they cook out and if you do, try cooking them.

How so? As the most popular cooking oil used, i'm sure everyone would like to hear your expertise on why it is so bad.
In fact the Mayo Clinic says quite the opposite, "Canola oil is also low in saturated fat and has a high proportion of monounsaturated fat, which makes it a healthy and safe choice when it comes to cooking oils."
Stop being so worried about the cooking oil, just enjoy the fish

Food service/rubber gloves would be a nice touch. Commercial kitchens are not operating rooms, but should be treated the same when cleanliness allows.
That deep fried fish looks super dry and over cooked.
