**** lemon blueberry Bundt cake recipe ****
3 sticks salted butter room temperature
3 cups granulated sugar
6 eggs
3 cups cake flour
1 cup heavy whipping cream
2 tsp vanilla extract
1 tsp lemon extract
1/2 tsp almond extract
2 cups fresh blueberries
1/4 cup all purpose flour
** lemon glaze **
1 cup powdered sugar
2 tbsp. salted butter melted
1-2 tbsp. fresh lemon juice
lemon zest for garnish on top
instructions
in a large bowl, cream butter and sugar together until fluffy.
add eggs one at a time, mixing well with every addition.
alternate adding flour and heavy cream, mixing well after each addition.
stir in extracts. in a separate bowl combine blueberries and all purpose flour blueberries should be completely coated. gently fold in blueberries to batter.
pour into a well greased 10-inch Bundt pan. place in cold oven and turn oven on to 325 degrees F. bake for approximately 1hr and 20min. check cake around the 60min mark. adjust the baking time based on your oven. a toothpick inserted into the center of the cake should come out clean. let cake cool in pan for 10-15 minuets remove cake from pan and pour lemon glaze. for the glaze just add all ingredients together until you have the consistency you like.
** my changes **
I added 3 unsalted butters and I added 1tsp of salt
I did 2 1/2 cups of sugar
I added 1 tbsp. of lemon zest into batter
for the glaze I also added a splash of vanilla extract. if it's to runny add more powdered sugar.
if you don't have cake flour whisk together 3/4 cup + 2 TBSP. (105g) all purpose flour and 2 Tbsp. (14g) cornstarch substituting by equal weight or volume.

Hi Ruth Good seeing you and the family always enjoy watching your videos your garden is coming along Love your grand dog I may try this recipe have been intimidated by it because of the blueberries sinking to the bottom but I see how you said do it so I may be trying it for the 4th of July All tuckered out from my grandson's Pre-K graduation🎉😊 I don't know if I'm going to do anything this weekend how about you? and thinks as always for sharing😊🖐🏾
