An eclair is a pastry made from choux dough, filled with custard or cream and then topped with a glaze or icing. The most common is Chocolate Eclair, but in Paris you can also find Coffee Eclair which happens to be my favourite. Inside, it is usually a creme patissiere. The dough is the same as for profiteroles. It looks very simple but it is incredibly complicated.

James Hoffmann, yeah who else would it be. He's "the" coffee expert for the job. I actually squeed when Alex called him. I love James' CZcams channel. An award winning barista himself, James teaches different techniques in coffee preparation, how to choose the right beans and ingredients, testing different coffee-making gadgets, and he has done a lot of crazy and funny things involving coffee. He's done some baking and cooking with coffee too. I'm so excited to see how he could help with Alex's coffee dilemma.

If that's correct there will probably be more sweets (I'm hoping for mille-feuilles) but possibly also savoury treats you can find in bakeries (Paris' best quiche? fougasse? jambon-beurre?)

The concept of inviting a professional to your kitchen and seeing what they can make with your equipment is genius!
Evidence that blaming equipment is an excuse. You work within and compensate for the limitations of your equipment. That said, I miss the control and capacity of a professional deep fryer.

@@tiacho2893 Growing up one of my fathers co-workers was married to one of the top chefs in the city. Every once in a while we would have them over and he would take whatever my mom was attempting to cook and step it up to something great with what looked like no effort at all.
The restaurant I work at has the EXACT same cooking machine as the one they have in the restaurant. I'm inspired to try making it now.

Hmm, would it be possible to make a creme brulee eclair? Vanilla custard filling and a torched caramel crust instead of a glaze.

When they ground the coffee in the mortar, my first thought was of James Hoffman saying, "Some of it will be over-extracted, some will be under-extracted."
Haha I love how the cream brûlée was so easy for you to master and only took like two episodes. Then the dry pasta series was like a million episodes of trying to dry that damn pasta. Love your videos!

What I liked most about this was that it was a professional pastry chef cooking with equipment that I can get or already have at home... it makes it feel somehow more accessible, like maybe if I practice more, I can bake e'clair like Utopie. Also, make sure that James brings his Bripe.

I think part of what makes these dishes memorable is the research for the most authentic way to make them. Experiencing the recipe that made people fall in love with a flavor and the technique involved is part of savoring them.

Wow. Alex this Video is another Masterpiece! The Camerawork, Editing and Storytelling are absolutely awesome. In my mind I could smell and taste everything I saw. And I guess we reached a new stage, with the master chef teaching you and us in your legendary studio-kitchen.

The moment you were talking about the coffee flavour being better I thought, imagine if James Hoffmann could be involved here, but they don't know each other, it'd never happen. They're two of my favourite, yet completely unrelated channels why would they ---OH MY GOD HE'S CALLING HIM! What a crossover!

What a video. I loved that the chef was in your studio. That improved the quality so much even though I missed the B roll of the artisinal kitchen the focus on the job at hand was really nice. Even in Germany i have heared of UTOPIE Bakery. They are outrageously good! I was in Paris for a Buisiness Trip just a few months ago and every day i went there and ate my way through their offered Food and everything was excellent. My Business Partner recommended me this Bakery while i was preparing for the trip. If anyone reading this is in Paris or plans to go there make going to this Bakery a big priority :D

Even before I finish the video I know this is gonna be a great one. I am OBSESSED with eclairs, they're my favorite pastry since childhood. And now that i live in France, my preferred choice is also mostly coffee eclair for a couple of reasons. First, in my country (Turkey) we classically only have chocolate glazed eclairs with 2 types of filling: vanilla custard and chocolate custard. And I usually prefer vanilla custard+chocolate glaze mix cause it feels so much lighter. But these aren't available in France, so sometimes chocolate over chocolate is a bit too much !! Thus i go for my next favorite flavor, coffee! Always goes great with the choux and not as overwhelming, yum 😋
First thought that came to mind was to do a slow brew with the coffee on medium-low heat so you extract as much of the flavour you can without boiling it off, in as little water as you can manage; basically, concentrate it down. Or maybe do a regular strong brewing and then use your desiccator to drive off the moisture and concentrate the coffee flavours that way. Interested to see what James will suggest!
Whatever he does, it's not gonna be hard to make better than Carte Noire coffee. It's not the worst super market coffee, but it's far from the best...
