    Since you don't have the rack for your new canner try this: Lay jar rings on the bottom in a single layer. It elevates the jars without affecting the space between them. I've done this and it works 😊

    The greens (leaves minus stem) are delicious steamed. Love them as much as I love roasted beets. Blessings!

    will be pickling beets soon here as well....but we also cook down the beet leaves and make beets greens and can as you would spinach or collard greens ♥️...my heart about broke when you left them out in the garden 😃.

      Don't you think they'd be tough, the beet greens? I do greens when I thin them out, they are very tender even with a tiny little beet on the end. Interested in your opinion 👌

      We've never had any problems with toughness. We don't use the stems just the greens, the same as we do with collard, mustard, poke and spinach greens. Just wash boil and can. And I did look it up and yes they can be canned.

    I have always noticed when I work with beets, no matter how much I wash them, they smell like dirt when they are boiling. I generally only pickle mine.

    Pickled beets are my all time most favorite preserved food! I could eat them every day.and make extra brine for pickled hard boiled eggs. They’re pretty and delicious too.

    I about died when you didn't save the bear greens and then saw you not even the save a tiny one with the greens. Then I thought ... those greens would probably be tough. When planting beets I don't care how many seeds go in a line and, as they come up, I thin them out and those I tke, even with tiny beets. Those are good beet greens and very tender 👌 Anyway, I'm impressed with your beet harvest! Great video as always. Blessings! 🥰

    Beet greens are better than spinach in my opinion. I freeze the greens and beets both.

    You can use the stem and blades , in green juice or in salt Witherspoon other blades and herkes. Is very helty. Fromme Norway

    My mom never liked the work that goes into growing beets. She would buy cans of regular sliced beets. Then she pickled them. They tasted very good. I loved helping her. I do admire your hard work.

      Wow I thought I was the only one who had done this. However this year someone gave me 4 huge beets and I made pickled beets. Only one huge jar and I keep them in the refrigerator.

    Ohhh cooked beet greens are so delicious! Hurts me to see them go to waste! Steamed greens tossed with angel hair pasta, garlic, grated asiago cheese (or parm cheese) add a ladle of the hot pasta water to toss and bring it all together. Add salt and pepper to taste. Cheap, simple dish.

    Beautiful beets! Beet greens are a favorite of ours. We steam them and they are rich in vitamin K, copper, manganese, iron and calcium. We also grow lots of zucchini for the blossoms, which we cook tempura style or stuff and steam. Use the skins with salt or vinegar to dye fabric.

    Thank you for this informative video. Our soil which we had to truck in is so clay like that we haven't tried growing beets. I love pickled beets and if we ever do grow or buy some to can this will be very useful.

      Ours was the same. I kept adding brown leaves every winter. Now they have broken the soil up to where it is loamy and softer. Takes a couple seasons but we’ll worth it. Hope that helps yours as well. Good luck and happy gardening.👩‍🌾👍🥦🍅

    Thank you for sharing the beats with us my recipe is similar but you also cook a cheesecloth bag with some pickling spice and a couple cinnamon sticks and a couple of cloves in it and not much seasoning but a little for about 5 minutes before you for the juice on it. Thank you for explaining about the river brethren Church I think that was more what my grandma and grandpa went to when I was little that they took me to it was actually right next door to and shared a cemetery with the Mennonite Church. I guess I see a split there at some time and place before I ever happened. I will have to check up on this River brethren a little more like always thanks for sharing tessie.

    From the National Center for Home Food Preservation: Depending on your elevation, you can between 35 and 45 minutes for both pints and quarts. I've had to go and adjust all of my old cookbooks to the new times and pressures. I had a bout of salmonella food poisoning and the after effects lasted over a year, I don't risk it.

      The difference is these are pickled pickled is a different times than plain beets

      I had salmonella also about two,years ago. They thought mine came from under cooked fish. I tried to figure if it came from using fish emulsion in my garden. Where did yours come from? We were never able to pinpoint exactly. What are you lingering side affects? I was in intensive care 5 days. It was horrible! Never want to go thru that again. So like you, I am extremely cautious and careful.

    Tessie, how long did you boil the beets and does the color wash out with the boiling?

      No you boil them for one hour do not prick them while you're boiling them in about an hour just slightly take a fork and see if they're soft

    I would really love to find a way to get myself to like beets. I always get such a strong "earthy" flavor. Do you feel this canning recipe, or any additions to, could possibly get me past that so I can enjoy beets? If I can beets and I do not like them, my daughter does. It would not be wasteful so I am very eager to try suggestions. -- there is only one time I was able to eat beets from a salad made by a coworker. It had stored canned beets, vegall, ect and it mimicked the taste of a coleslaw to me. I did recently find her handwritten recipe. I think I only made it once myself and so long ago.

    I thought pickled items could be water bathed? That looks like a nice pressure canner.

      Yes that is correct I shared in the video that you can use the pressure canner at 5 pounds pressure if you don't want to deal with all of the boiling water

    The deer are terrible here and it doesn't help my neighbor feeds the deer. Deer are very smart creatures if they want my beans they will find a way. Love beets pickled and luckily my husband doesn't like them. Thank you for the video. God bless.

    I want to know how your hands were not dyed after peeling all those beets and then cutting and putting them in the jars? My poor mother’s hands would be dyed red when she handled beets.
