    In my family it was considered inevitable that some would break. Older kids would be tasked with rolling the krumkake but really young kids were responsible for "disposing" of the broken ones.

    The Italian one you're thinking of is pizzelle. They are often flavored with anise but some of my Italian relatives actually prefer them vanilla flavored. Typically they're served flat but they can be rolled into other things you can make cannolis with them. But traditionally cannoli shells are a different dough and I believe they're deep fried.

    There is another Norwegian cookie you roll as a cigar: Strull. How you roll them is how you can separate strull from krumkake. Also you should get the cone roller with the metal pinch attached = fewer burned fingers 😉 I’m a bit puzzled that you state the krumkake has to be eaten straight from the iron though.. In a closed airtight container they’ll stay fresh for weeks.

      I completely agree with you about eating them right away; I just made 4 dozen today and will be shipping them to various family members later this week. :)

      if you want them soft as opposed to eating once theyve cooled and hardened.

    The trick is to make them look like lace. I still have the cast iron mold. I got it for a wedding gift 40 years ago.

      It depends what you put into them. If you use whipped cream you might not want the lace pattern.

    @Goor Studio Genevive is thinking of pizzelle cookies they are made on iron just like this only rolled in stick not cone.
