-Make poolish 24 hours before, 400ml Water, 400gr. Flour, 5gr. Yeast, 5gr. honey.
1- All Poolish
2- 130gr. Corn Meal or Semolina
3- 270gr. Flour Any
4- 30gr. EVOO
5- mix 100ml. Water with 24gr. Salt

There many many secrets to the best pizza. Dough, toppings, sauce, smoked, fire, kinds of wood. less but not last CHEESE, AND HERBS ect MY GO TO PIZZA IS FIRE AND SMOKE!

YUCK corn meal is used on the pan to protect the pizza NOT IN THE DOUGH. You want your pizza crust to be almost bread like. but a little more flexable and stronger than bread. You want the crust to rise around the sides, where there no pizza sauce on it. Any where you put the pizza sauce, it WANT RISE

Followed this recipe the other day. Awesome!!!! Just like all of your recipes/techniques. I went a little smaller on the dough ball size, 260 grams vice 300. Made 2 pizzas, froze the remaining dough balls for another day. Cooked my pizzas on my Forno Bravo pizza store for the cook. Will use my Ooni for my next cook. Thank, graci Vito!!

don't wish any further. The Gozney Dome is back on the market as of today at noon. I just ordered the dome because of Vito's reviews. Not knocking any other company, but this thing doesn't look like a $1,000 dollar toaster oven.

this reminds me of mellow mushroom pizza.
its a pizza chain in the southern USA and they use corn meal as well. for sure makes for crunchier style and easier to work with.
