- It's been a sweet while since we showed you a new NY Cookie recipe so we thought we'd come back with a banger. Sally and Dane are here to show you our brand new recipe for Strawberry Shortcake NY Cookies! Packed with Strawberry flavoured chocolate and freeze dried strawberries and then rolled in demerara sugar to give the ultimate crispy casing to this gooey cookie.

Preheat Oven to 180C fan assisted (200C non fan)
230g Cold Unsalted Butter
160g Caster Sugar
160g Light Brown Sugar
400g Strawberry Chocolate
15g Freeze dried Strawberries
500g Plain Flour
2 tsp Baking Powder
1 tsp Sea Salt
2 Eggs
100g Demerara Sugar

I used Lindt strawberries and cream chocolate. The cookies turned out amazing!!!! All the NY cookie recipes are amazing. So grateful you share them with us 😋

Wilton makes these pink vanilla flavored candy melts which are shockingly, amazingly delicious and most local grocery stores carry them. So I used those guys with the freeze dried strawberries and just to make sure I didn’t miss out on the signature strawberry taste I used a teaspoon of strawberry extract! Let me just say when I was mixing this the smell was bonkers!!! It was so fragrantly delicious and then the baked good itself …WOW!! Thanks for these NY cookie recipes💜

I made these. SO. GOOD. I added dried chewy strawberries to mine as well. And used Valrhona Strawberry chocolate. It was so good!

Their matcha and macadamia cookie is green. Or just sub out the strawberry melts for green colored vanilla ones.

I made your strawberry shortcake cookies. It tasted delicious and crunchy, but it did not spread out and it took me 35 minutes too cook. Although it made the sugar on the bottom part nice and caramelized. Thank you!

I couldn’t find any strawberry chocolate so I’ve just made these with a mix of ruby chocolate and white chocolate…I think next time I’ll put more dried strawberries in as the strawberry flavour is not obvious!

I wish you would ship to countries other than the UK. My daughter adores you all and I would have loved to surprise for her 7th birthday in March with this baking kit.
How much does a kit weigh? Maybe I can get a uk friend to ship it to me if postage won't be ridiculously high.

I used Wilton Strawberry flavored chips, which I picked up at Walmart. The cookies tasted like a strawberry Pop-Tart. Next time, I am going to leave out the Demerara Sugar.

I would love a banana cookie. I love banana bread! It's my go-to, but sometimes I just want to demolish a cookie! I've never seen one before, so it might not even be possible
Funny you mention it, my mom made this request recently and so I made some based on their original NY recipe. I basically just mushed 3 medium sized really ripened bananas (I just stick them in the oven at 350 F for 10-20 min to do that) and added cinnamon and a little nutmeg, then made the cookies as directed but added pecans with the chocolate chips and the banana in along with the egg. Oh I also always add vanilla to my cookies at that stage. The dough is a lot stickier, but I stick it in the fridge for a bit and then portion it out. It bakes roughly the same but time may vary slightly. I've made them a few times and they've come out amazing.

Yes, you can do it with all the cookie dough. Freeze and use when you want. That way, you don't have to worry about eating too much at once
