I remember when my friends came to restaurant and I tried the cebu lechon,it was my first time to eat the cebu lechon and man,all I can say was it's very delicious!..different from the lechon I'd tried before..btw ribs is my favorite part of lechon😁

Lechon stories? Now that's gonna be difficult because lechon is the story of the highlights of my life. Fiestas, baptisms, graduations, despedidas and homecomings - for all of those big moments, lechon was and always is a centerpiece. Even Sundays together with the family meant at least a kilo of lechon. Ever since leaving home, lechon has become the symbol of the highs (and even the cozy and familiar normals) of my life. What a really lovely story that the owner shared. She was such a sweetheart and she must work very, very hard.

I have to agree that it is a Blessing to still have your Mom... I have so many memories of me and my Mom cooking together and sharing food with the family... the joy of cooking something that she enjoyed is priceless.

I think the skin would be cooked better/crunchier if it was an open pit charcoal than the the bbq smoker

Other shows have featured Lechon from other US based Filipino restaurants and I've never used an open pit; it was either an oven or a smoker. The reason given was that open pits were illegal where the restaurants were located and they did everything in-house. This is maybe the same situation. Do the best with what you have; sometimes that's all you can do.
I honestly didnt think it crunch but the heat seemed to be enough. But still better than what I see normally outside of the Visayas and the Philippines.. But to be honest its really hard to do it like in Cebu..

This is good...this good...and by the way, I’m from Cebu, but there are other places other than Cebu that makes amazing lechon. Cagayan de Oro and Negros Oriental to name a few. It’s a matter of technique I guess. But anyhow, cheers to you! By far one of the best series from Eater.

I'm from Carcar Cebu, home of Lechon de Cebu, and i'm currently in London. Like your mom, I always look for a specific taste of lechon because I grew up having it being cooked in our backyard by my papa and titos. And that belly part your tita started to tear off first, gaaawd! I'm crying looking at this video right now. I wish for more success in Halo-halo series!

Lechon in the Philippines tends to be hand turned by a guy with years of experience, as opposed to the machine used here. The results is evident. The skin on hand turned lechon is uniformly cooked, with none of the burn spots or cracked skin you see here.

tita if you could learn how to make lechon sarsa from scratch it would be much much better than mang tomas. and your customers would love it for sure.
Cebu lechon doesnt use sarsa. They use pinakurat.

The thing is Cebu Lechon does not use sarsa because it doesn't need it.

Shes right, the proper and correct sauce in lechon is vinegar. Sinamak, Sukang pinakurat, is just a variety of coconut vinegar.
Use coconut vinegar put some crushed garlic and sea salt.

Iligan has the best lechon. Hands down...I've tried different lechons in Cebu city, Danao, Compostela, Liloan...nothing compares to Iligan lechon.

Cebuano isn't a dialect it is a completely different language.
Basti Fortuna lol it’s a dialect dude, don’t make it out to be something more than it is. Cebu ain’t a country with its own Language. Cebu is an island that is part of the central Philippine visayas with their own unique dialect.
Yes, Cebu is an island inside the Philippines. Philippines has a lot of languages and far more dialects Cubuano, Ilonggo, Ilocano etc. are languages and to give you an example of a dialect Batangeno is a dialact of the Tagalog language. Please know the difference between what a language and a dialect is. Unless you think British english and american english are two totally separate languages because they are separate countries. I speak Tagalog which is spoken by the majority of the people in the Philippines and I can't bloody understand Cebuano, Ilocano, Ilonggo and smattering of the other languages that's present in our country.

Lost Under the Sky Cebuano is a language, so are Ilonggo, Hiligaynon, etc. Language is not as simplistic and basic as “one country=one language”. Languages are defined by syntax, grammar, phonemes and such. Our own Phil constitution recognizes them as languages too. You may want to read up first before you start arguing and effectively spread wrong information.
I hate it when Filipinos say they are Pacific Islanders too. Dude Filipinos are Asians. They ain’t Pacific Islanders. Can you imagine Taiwanese, Japanese people calling themselves that. I don’t know why Filipinos try so hard to be unique different and be elitist about it. Over 75% of Filipinos I know who immigrated to the USA when they were young don’t even know how to speak their own mother tongue now. Almost all that were born in the USA don’t speak at all. I don’t see that with Koreans, Cambodians, Vietnamese, Laos, Hmongs, Chinese just to name s few. A lot of those are so fluent bilingually. I don’t know why Filipinos have to be shameful about it
