I always feel like that would be the case in any attempt at time travel. I think that you'd never realise that you always existed in the past until it's too late. It's very easy for you to not know about the actions of one person even 70 years ago.

A parallel world wouldn't take into account the history that the characters knew of, as you see they all knew key details of history but not how they came about
Like Lady Claire should've died earlier in the movie but was saved and later sentenced to hang, to the characters knowing the war, Claire major part in the war was to be hanged, so they didn't know she was almost killed
Plus the earless engraving, the lenses etc, they all stayed part of the timeline, so the point is if it was a parallel world nothing would appear that they didn't already know about, a change in history would only affect the world the team went to, not the world they came from

Not that this is a major concern, but Greek fire not being extinguished by water has nothing to do with the intensity of the fire. Greek fire burns hydrocarbons which aren't soluble in water; it will just float on the surface or be scattered, etc. Also, while we have numerous modern formulas to create substances like napalm, Greek fire generally refers to the substance used by the Byzantine empire. The thing about that is that it was such an effective weapon that it was a deeply guarded state secret. So deeply guarded, in fact, that all that survives is the description of the weapon and its effects, not the actual formula. There are numerous theories but nobody knows for sure what it actually was, so it would be tricky for the professor to offer it. Of course, he may have simply intended to refer to any substance with roughly the same properties as Greek fire, but strictly speaking it wouldn't have been the same thing.
