Cooking chicken biryani for 30-40 people - For when you are really REALLY hungry!

- We had an order to cook chicken biryani for 30 people so we decided to film the process of making such a large pot of food. Scaling up the normal chicken biryani recipe ( • Making Everyone’s Favo... ) is relatively easy, with just a few tweaks - but it does take some practice to become confident with such large quantities of food!
Not a recipe but more a demonstration of how it is done.
I am addicted to your videos. Makes me homesick. You remind me so much of my aunts in SA. I love the authentic cooking style with the huge spoon🥰🥰🥰
Free range chickens are so delicious and my favorite..

I used to live and work in Durban for many many years. I really miss those massive biryanis that would appear at work on birthdays and special occassions!
Always the best time because you are sharing a good meal with friends!

I like to know do you sell your masala at any shops in Johannesburg, I'm hungry now, great work, was beautiful watching you, you simple and yet accurate, thank you so much, I figured it was tastic rice you used,
Hi Cynthia. I don’t sell my mixed masala but here is the video that shows exact quantities of how I mix it up:

Thank you very much.
Thank you for sharing auntie❣️
My pleasure 🙏🏼
Thank you for the recipe it looks delicious. I have 1 question, what does free range chicken mean. Is it live chicken? because you said it is not frozen chicken.
So it's not the live chicken one would get typically - it is just fresh whole chicken from Woolies that is certified as free range, which means they are raised on farms that allow them to roam outside and they are not in cages most of their life.
Beautiful very lovely recipe. You are a great cook 👍🌹👌
Thank you so much!
Love your your voice, love your videos, thank you for sharing your recipes ♥️
It’s absolutely my pleasure 🙏🏼
Looks lovely
Thanks so much!
Tks for sharing mom, the biryani looks divine. Luv watching you cook
Thank you 🙏🏼
Good morning Mum 🤗
Breyani is looking delicious. I will definitely try your method. I usually add my rice to the curry and cook in the oven.
I'm sure the smell of the breyani wafting through the air, making those who can smell it, so very hungry!!! 🤗🙏
Good morning Shana!
Yes we also usually put the layered biryani into the oven (czcams.com/video/7vPwXY5PFLY/video.html) at about 150deg for some time to dry out a little bit. Because this was such a large quantity and pot it couldn't fit into the oven so had to be dried on the gas stove for a little while and then added to a wonder bag (a very large one) and left to cook for a little while longer
@@GaithreeDeviLuckan I've been looking for a wonder cooker bag. From Where can I get one?
@@shanalawrence4381 When we were staying in Durban we would get it from Blue Lagoon - not sure if the sellers are still there over the weekends...
Good morning Mum.Breyani looking mouth watering. I think this amount of breyani can cater for 45 guests comfortable.God bless you
@@GaithreeDeviLuckan Oh yes. I do have one. I tried cooking mutton breyani in it, but nothing happened. Head to eventually cook it in the oven. I thought maybe there's a different wonder bag which I need for cooking
Awesome looks divine
👏👏👏 the real deal!! 👌👌 Thanks for sharing
Absolutely a pleasure!
Well done Aunty keep it up
Aunty you are brilliant 😊reminds me of my dad
Thanks so much!
Looks devine. Now im hungry 😋😋
That pot could feed abt 100ppl
thank for sharing looks awesomely delicious
Pleasure 🙏🏼
Just love aunty Lallie❤
Thanks 🙏🏼
It’s looking absolutely yummy 😋 I’ve never made biryani this method. Always marinate my chicken and layer it raw on a layer of rice and lentils. It’s the moslem way and steam for an hour to perfection every single time.
So I should perhaps try your method too. 🙏💕🙏
Ohhhhhhh....delicious.....looking....just a plate for me please!!!!😍😍😍
Thank you 🙏🏼
I always enjoy ur watching ur shows I get hungry also😊 17:46

Yes we are in Joburg
hello, I am watching, I love watching you
Thanks for following along 🙏🏼
What do you charge for this amount of chicken breaking?
This order was made to the specifics of the customer and we had to adjust pricing for the free range chicken we used. If you are in Joburg we can send you the latest menu price list - please contact my son on email pranesh.iluckan@gmail.com
Hi auntie biryani looks delicious, I think it could feed about 80to 100 people
Usually we would work on about 3 people per kg of chicken - so for 30 people we would use closer to 10kg but we were specifically requested to cut the quantity of chicken down...
Off course Pranesh Tasted 🤣!!!
Thanks his duty!
Ma your food looks divine. My hubby thinks we should move next door 😂
Hehe you would be first to smell the biryani on a Saturday morning!
@@GaithreeDeviLuckan I won't mind ma your food looks delicious. Il have to move from Durban
ma, i love ur big wooden spoon......im gona guess about 40 people can eat ur tasty breyani
Thanks Veez, yes depending on the appetites should easily do 40 but we like to be more generous and say about 32-35 comfortably.
Delicious
Thank you 😋
Hi aunty
Thank u for your lovely recipes
Can u give me da recipes for soft chicken briyani, cooking for 50 people
Stay blessed
Hi there. Here is the the recipe that feeds 6-8 people czcams.com/video/7vPwXY5PFLY/video.html. The full recipe details are in the video description. For 50 people you can multiply all ingredients by about 6 times. So for instance if 2kg chicken feeds 8 people you will need about 10-12kg for 50 people. We estimate 5 pieces chicken per person but you can always adjust this lower because 5 pieces is quiet a meaty biryani so if your prefer more rice you will need less chicken.
Or alternatively you can watch this recipe and scale up by about 1 and half times to get to a biryani that feeds 50. This recipe was enough for 35 people comfortably.
Hi aunty.. Can we have the recipe please.. Thank you
Hi please see the video for smaller quantity (4-6). We then scale this up when we cook for larger numbers.

I couldn't help but imagine that wooden spoon as a weapon 🤣🤣
Lucky the children were well behaved - imagine spoon hiding with this spoon!

Hi Presha. You can reach out to Pranesh on Pranesh.iluckan@gmail.com. We can take it from there. Thank you 🙏🏼
Yummylicious
Thanks so much!
Hi bryani looks very nice should feed 40 people
It could well be stretched....
Is that a spoon or an oar
🙊 Yes that’s my biggest wooden spoon and could double as an oar! It was a gift that my brother in law made special for me
❤❤❤❤❤
I think it will feed 80 to 100
Do you have a recipe for tripe and trotters
Hi. Apologies for the delayed response - I do have a recipe but no one here eats trotters or tripe - when we have visitors who do eat it we will be sure to make and film it.
Hello.
I clean the Trotter's nicely... You got to cut out the hair on either side of the hoof. Give it a good wash. I boil them for about 20 minutes in the pressure cooker.
When it's boiled, I transfer it into a pot. I then boil about a cup of sugarbeans in the cooker for about 10 minutes.
To braise, you add to your pot...
Oil, onions, your mixed masala
Let it braise on medium heat, then add your boiled Trotter's only. Add your ginger and garlic, salt, curry leaves, 1 tomato. Give it a stir, add the boiled sugarbeans.
Add the Trotter's water, depending on how much gravy you want. I cook it on high heat thereafter, since it won't take long to cook. Once it's thick and you have your desired gravy consistency, remove from stove and garnish with Dhania.
I don't have measurements, I just eyeball it 🙂
@@shanalawrence4381 Thanks for sharing Shana!
@@GaithreeDeviLuckan you're welcome Mum 🤗
50 people
Today people eat so much for me it 35 to 40 if u have some more 😅❤
About 50people

Yes it could but we like to be very generous.
That big spoon look so uncomfortable to work with.
I am used to it and do this quiet often, maybe once or twice a month
