Would I be too tall for the GTR at 6 ft 7? I’m not concerned with the deck height, just the distance from the deck to the handlebars

Hi, I don't think it will be too tall. The distance from the deck to the handlebars is 955mm and the distance to the ground is 258mm, this data can be used as a reference for you, or you can go to your local Kaabo store and test ride for a more accurate feel.😊❤
