I mean how often do you get a professional personal Japanese chef wearing what looks to be a Kimono, grilling wagyu in the traditional way and pouring beer whenever your glass is close to empty, in front of you?
Thats not methodical. This is basically a clean BBQ at best. The wood is the best part of the technique. Look at the beef closely...Not A5 to standard!
Try using any kind of herbs or citrus as a basting brush. My favorite is a rosemary sprig. You can also use garlic cloves, thyme, lemon, or leeks. It also depends on what you've got on hand or what extra flavor you want to impart. If you bury your kitchen scraps or have compost/fertilizer, make sure you rinse off the marinade before you discard because of the salt content.
One of my favorite parts of these vids are the commenters stating the sad foods they are eating while watching this. I myself am eating generic fruit snacks and popcorn

After 5 years in Okinawa and numerous business trips to mainland Japan and trips to 14 other countries I still say the food experience in Japan is the best in the world.

Each steak is literally 3 bites. Most steaks on the menu at the steakhouse I frequent weigh 24 ounces or more. Some 32. He was served maybe 6 ounces of steak among all 4 of those bite sized niblets.
