$270 Omi Beef & Lobster in Kyoto - Gourmet Food in Japan

  • Omi Wagyu Beef belongs to the 3 most reputable cattle breeds in Japan (beside Kobe Beef and Matsusaka Beef). The highest quality A5 Wagyu, such as Omi beef, is usually firm to the bite with a distinct strong taste of beef. Unlike medium and lower quality A5 Wagyu, which "melts in your mouth" like a piece of butter, a rather unpleasant sensation for most people.
    In this restaurant usually 80 g of Omi Beef are served for the set lunch meal. I asked for additional 40 g (4,000 Yen/35 USD), the chef put 10 g on top for free. Without the lobster and with the regular 80 g steak, the lunch is about half the price.
    Interestingly the chef spoke only Japanese and French, they English speaking waiter explains the different food items. Filmed in Kyoto, Japan.

      The steak was pressed down in the cooking process... most amateurs know not to do that, so to call it phenomenal is a BIT of an overstatment. Also the fact you got joy from seeing an animal squirm on a hotplate (alive or dead) is pretty weird

      @@RageMageD "Don't press down on steak" much like don't flip steak or burgers in fact has little to nothing to do with the process. In this case you wouldn't really need to since the steak's down on the heat without a problem and not curving. The idea that it will lose flavor or dry out is an old wife's tale unless you slam it down with a hammer.

      RageMageD You do realize that this is special type of meat right? This steak has wonderful inter-muscular marbling. To press down on the steak is to pass heat through it. Nothing more or less. Perhaps the amateur here is the one to draw attention to and malign a perfect stranger’s praise to a chef’s work. As for the lobster, the heat of the griddle contracts the fibrous tendons and appears to move as if alive, it is not however. Cultural relevance dictates that one should not criticize a culture without a complete understanding of the chosen culture or country. Have a Nice Day!

    I can't get enough of watching these teppanyaki chefs cook. The food itself isn't the most interesting part, it's the technique and certainly the attention to detail. Rather mesmerizing to watch, actually.
    Of course the Wagyu looked absolutely delicious. I've had Wagyu on a couple of occasions but never the most expensive A5 grade. One day maybe.

    At first glance, you think: "I could prepare this meal if I had the equipment and some time to practice." And you could probably make a good start (especially if you've watched enough of these videos heh.) But then it is the SAUCES, seasonings, and special care taken in terms of time. Beautiful job by this restaurant, I wish I'd been there.

      They clean it with a liquid (I think alcohol) while it's hot to get the stuck bits off and then use a steel wool kind of scrubbing sponge with cooking oil to polish it back.

    idk but for me, best way to eat lobster is when you freshly take it out of the shell. when the meat is fried or grilled out of the shell, it feels like the taste loses some of its "seafood" taste. idk any other word to describe it

    Whats the Name of the Restaurant?

      Kanzan Seseragi, Kyoto Japan. It is part of the Suiran Hotel in Kyoto. 12 Sagami Tenryuji Ashinobaba-cho, Ukyo-ku, Kyoto-shi, Kyoto Prefecture.
      You can find their menu if you google that. It's 10000 Yen for the basic meal, another 4000 for the extra beef, then a 10% combination of taxes, and then the gratuity. BUT it looks like their menu is different now, probably due to the Plague and the exchange rate, they are trying harder to stay in business.
