Ingredients:
For Litti-
Dough:
Wheat flour - 2 cups
Ghee - 2 tsp
Salt -1/2 tsp
Water
Stuffing preparation :
Sattu (roasted gram flour powder )- 2 cups
Onion -1/4 cup
Ginger -1 tbsp
Garlic - 1.5 tbsp
Green chilli - 1 tbsp
Coriander leaves -1/4 cup
Carom seeds-1/2 tsp
Nigella seeds -1/2 tsp
Mustard oil -2 tbsp
lemon juice - 1 tbsp
Salt to taste
Any pickle masala - 1tbsp
Baingan tamatar Chokha:
Brinjal - 1
Tomatoes -2
Garlic cloves - 3
Green chilli -2
Chopped green chilli -2
Chopped ginger - 1/2 tsp
Chopped garlic - 1 tsp
Salt to taste
Mustard oil - 1 tbsp
Coriander leaves - 2 tbsp
Green chutney:
Coriander leaves - 1/4 cup
Mint leaves -1/4 cup
Tomato -1
Green chilli -2
Ginger - 1 inch
Garlic cloves - 4
Salt to taste
Lemon juice -1 tsp
Salt to taste

@@KabitasKitchen मैडमजी, आप अपने खाने की रेसिपी तो ठीक हैं, पर खाने को पकाने की रीति, मेरा मतलब ये है ही हैं की खाने को बनाने का सही तरीका, मसाला भुनने का सही तरीका, खाने को किस आंच पर किस मसाले को डालना हैं और किस मसाले को नहीं उसका विवरण अगर आप दे सके तो यह कला आजीवन रहेगी। मैं फूड चैनल्स को फॉलो करता हूं, बहुत सारे लोग कुछ ना कुछ ऐसा मिलाते रहते हैं, वो लोग पित्त, वात, कफ का ध्यान ही नही रखते हैं।
इस तरह खाने बनाने से सिर्फ शरीर को मद ही प्राप्त होता हैं। राजस्थान से होने कारण पूर्व राजकीय खानशामो से सुन ने पर मुझे लगा की आज की पीढ़ी जो बिन सोचे समझे कुछ ना कुछ बना देते हैं, वो शरीर को इन विकार से शिकार बनाता हैं, आप प्लीज इस दिशा में अपना ज्ञान प्रयोग कीजिए। भोजन स्वाद से काफी बढ़ कर हैं, ये आज की पीढी को जानना होगा और आपकी रीच इतनी ज्यादा हैं की आप इस दिशा में काफी कुछ बदल सकते हैं।

Actually this is a staple bihari dish not so commonly made in UP. I'm from western UP and I had never tasted this amazing dish untill I was 17 years old (I'm 34 now) when our Bihari neighbours invited us over for litti chokha, and my mind was blown, my mother learnt the recipe from our neighbour aunty and she's been making it ever since and we love it.
In U.P. it is BAATI CHOKHA right?
