Coconut Buns
2 cups all purpose flour
1 tsp baking powder
½ cup butter
½ cup sugar
1 cup grated coconut
½ cup raisins or currants
2 eggs
1 tsp vanilla extract
¼ tsp almond extract
Preheat oven to 350 degrees.
Combine flour and baking powder in a container. Add cold butter and rub into flour until it resembles coarse cornmeal. Add sugar, grated coconut, raisins or currants and mix well. Whisk eggs with vanilla and almond extract. Add eggs to dry ingredient and mix using a spoon to form dough.
On a large baking pan use spoon to drop the dough on the baking pan to make 8 equal buns.
Place in preheated oven and bake for 25 minutes or until golden brown. Cool before serving.

As a Barbadian born in NYC, I was raised on coconut bread. my grandmothers and a great aunt who made them have died so I have not had coconut bread in 30 years!!!! Well, I am eating it right now thanks to this channel!!! It’s delicious warm. I always got them cold and hard. I used to eat thes with hot tea. This recipe was filled with coconut.
I am low carb so I used almond flour and 1/4 of powdered protein. Mine are golden brown!! The coconut bread of my youth had more of a white look and they were hard. This is fabulous. THANK YOU!! I have subscribed!!!
My son & I made these today, I boil bay leaf and cinnamon then added the water to the mixture. I grated nutmeg to flavor it up. This was our first time and it wouldn't be the last. Thank you for this recipe.

Hey Jehan, for a few years I’ve been watching you & I love your recipes and enjoy making foods from our culture 🇬🇾. I’ve followed your recipe for this 3 times now. And the buns were delicious. My household and I don’t eat egg so I substitute milk for most recipes. For this one I do 1-2 cups of milk. It comes out slightly different with the texture but the flavor and deliciousness is still there. Thank you for all of your recipes ❤️❤️
These are 10/10 👌🏼just came out of the oven and it’s soo good warm ! Crispy on the outside and soft on the inside - it’s not too sweet .i used real coconut as I never know what to do with the husk when finished cooking and I used raisins instead . Thank you so much for this recipe- I’m never buying this from a bakery again

I made this last night & baby let me tell you - it was DELICIOUS !! So good - I added a half tsp of cinnamon and some nutmeg plus a splash of milk, also added some chocolate chips to some but the raisins were much better - so quick and easy, thank you !

Thanks for the recipe 😍 I would have never think of using already prepared coconut flakes. I am use to making it from the freshly grated coconut. I will definitely try it with the flakes. They look extremely delicious 🥰

We call it coconuts drops here in Trinidad and Tobago in the Caribbean, one of my favorite desserts.

In Trinidad it's called "coconut drops" or "rock cakes". And we always use the freshly grated coconut flakes.
My nana made these here in England always called them Rock Buns I loved them
